Schezwan noodles. There’s so much to love about these noodles interlaced with the addicting flavors of authentic schezwan sauce. Featuring classic Indo-Chinese elements, this is totally customizable with your favorite veggies and protein. Fuss-free weeknight meal at its best!

Is there anything more delicious than vibrant noodles on a busy weeknight? It’s definitely the ultimate way to create a meal using seasonal ingredients. I absolutely love this easy, fool-proof, veggie-packed noodles.

This schezwan noodles recipe is meatless, but it’s loaded with plenty of flavor from schezwan sauce, soy sauce, rice vinegar, beautiful veggies and udon noodles. The right amount of nutrition to keep you satisfied. The recipe is vegan friendly, but you could always stir in some cooked shrimp (prawns), chicken, or even beef.

Like any simple noodles recipe, this takes only about 7-10 minutes and is the best way to end your meatless Mondays on a nutritious note. You can even cut the prep time by grabbing a pack of pre-cut veggies from your grocery store, making dinner times a breeze.

How To Make Schezwan Noodles

The recipe is pretty straightforward. And it only involves simple ingredients that you may already have on hand.

One of the key elements of these schezwan noodles is schezwan sauce – a fiery hot sauce featuring a delicious combination of dried red chiles, soy sauce, vinegar, tomato sauce and a few aromatics like ginger, garlic and onions. It adds that extra wow factor to these noodles.

You will also need to cook the noodles separately according to the package instructions. While the noodles are cooking, make a simple sauce consisting of schezwan sauce, soy sauce, rice vinegar and honey.

To stir fry the noodles, start with frying up some garlic followed by softening the onions. I also like to add a sprinkle of sesame seeds to add that beautiful contrasting texture. Next up, the veggies. Choose your favorites or go with easily available seasonal produce. Stir in cooked noodles and sauce. A quick stir fry and top with plenty of sesame seeds and spring onions (scallions).

Ingredients

  • 440 g noodles I used udon
  • 2 tablespoons schezwan sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon honey
  • 1 tablespoon oil
  • 1 large garlic peeled and chopped
  • 3 tablespoons chopped onions
  • 1 teaspoon white sesame seeds
  • 2 cups chopped or sliced vegetables I used carrots, broccoli and capsicum or bell peppers
  • Spring onions scallions, chopped, to garnish
  • Sesame seeds to garnish

Instructions

  • Cook noodles according to packet instructions. Set aside.
  • To make the stir fry sauce, combine together schezwan sauce, soy sauce, rice vinegar and honey in a small bowl. Set aside.
  • Heat oil in a wok or large frying pan over high heat. Add garlic. Stir fry for a minute or until fragrant.
  • Add onions. Stir fry for 2 minutes or until the onions are soft and translucent.
  • Add sesame seeds. Stir to combine.
  • Add vegetables. Stir fry for 2-3 minutes or until the vegetables are crisp tender.
  • Add cooked noodles and stir fry sauce. Toss. Stir fry noodles for 2 minutes.
  • Garnish with spring onions (scallions) and sesame seeds.
