Masala sandwich. Crisp and golden buttery bread, spiced potato filling, and a generous layer of chutney make this sandwich an irresistible treat. Easy to prepare and endlessly adaptable, each bite brings the perfect contrast of crunchy toast, soft potatoes, aromatic spices and refreshing chutney. Whether you are looking for a quick breakfast, light lunch, or an afternoon snack with a cup of masala chai, this homemade sandwich is guaranteed to bring that Indian street food magic to your kitchen.

Why I Love This Classic Sandwich
This Indian style sandwich is filled with spiced vegetable mixture commonly made with lightly mashed potatoes, onions, ginger, green chilies and spices. The vibrant green chutney, a quintessential element of this sandwich, is made with coriander leaves (cilantro), mint leaves, garlic, ginger, green chilies, and fresh lemon juice. The chutney, sliced onions, tomatoes, bell peppers (capsicum), and cheese slices add the flavorful layers. The bread slices are toasted until crisp and golden to create the perfect crunch.
For toasting the sandwich, you can use a frying pan or sandwich toaster. Spread butter generously over the sandwich to create the golden exterior. The crispness of the bread contrasts the softness of the potato filling, with fresh chutney adding brightness and a gentle spice kick. The best part? It’s versatility that makes the sandwich a classic favorite. It can be a quick breakfast, a filling lunch, an afternoon snack, or an easy dinner without prepping an elaborate meal.
Key Ingredients In Masala Sandwich
- Bread - White sandwich bread is the classic choice. I opted for sourdough.
- Green chutney - Homemade or store bought.
- Butter - To toast the sandwich.
- Potatoes - The main filling ingredient.
- Spices - Ground turmeric, ground coriander, garam masala.
- Cheese slices - Optional, but perfect if you enjoy a richer, cafe-style sandwich.
How To Make Masala Sandwich
Step 1 - Prepare the spiced potato filling
Heat a small amount of oil in a frying pan. Add cumin seeds and allow them to sizzle briefly until fragrant. Next, stir in onions, ginger and green chilies, and let the onions soften. Add all the ground spices, and stir briefly to release the aroma without allowing them to burn. Add the cooked potatoes and mix thoroughly. If the mixture is too dry, add a small splash of water, but avoid making it wet. Finish with chopped coriander (cilantro) leaves.
Step 2 - Assemble the sandwich
Spread a thin layer of butter and green chutney on one side of the bread slices. Top one slice of bread with potato filling. Add thin slices of tomatoes, onions and bell peppers (capsicum) if you like. Avoid overfilling the bread. Top with the second slice of bread.
Step 3 - Toast until golden
You can toast the sandwich in a frying pan, sandwich toaster or flat griddle. To toast in a frying pan, melt a little butter, and cook until both sides of sandwich are evenly browned.

Frequently Asked Questions About Masala Sandwich
Which potatoes are best for a masala sandwich?
Floury potatoes work well because they are easy to mash and absorb seasoning. The important thing is cook them until tender and avoid adding too much liquid to the filling.
Can I make masala sandwich without cheese?
Absolutely. Cheese is an optional addition. The potato masala, chutney and toasted bread add plenty of flavor of their own.
How do I stop masala sandwich from becoming soggy?
Drain the potatoes well, cool the filling slightly before assembling and use the chutney sparingly. Make sure you toast the sandwich in a preheated pan.
Can I make masala sandwich in an air fryer?
Yes. Assemble the sandwich and lightly butter the outside. Cook in a preheated air fryer at about 180ºC (375ºF), turning halfway through. Cooking time may vary depending on the appliance and the thickness of the sandwich.
