Cook noodles according to packet instructions. Set aside.
To make the stir fry sauce, combine together schezwan sauce, soy sauce, rice vinegar and honey in a small bowl. Set aside.
Heat oil in a wok or large frying pan over high heat. Add garlic. Stir fry for a minute or until fragrant.
Add onions. Stir fry for 2 minutes or until the onions are soft and translucent.
Add sesame seeds. Stir to combine.
Add vegetables. Stir fry for 2-3 minutes or until the vegetables are crisp tender.
Add cooked noodles and stir fry sauce. Toss. Stir fry noodles for 2 minutes.
Garnish with spring onions (scallions) and sesame seeds.
