Weekday mornings are obviously the busiest time of the day. Looking at the mayhem in my own home at 7 am in the morning, I just couldn’t agree more. So, clearly, for effective time management, I’m always on the look out for easy breakfast ideas that doesn’t skimp on nutrition and taste.

Again, I always love the idea of bringing together humble ingredients to create amazing dishes that the whole family will enjoy. And in this recipe, I’m talking about a one pan breakfast dish totally inspired by the idea of cooking in one pan.

Chicken sausages, vegetables, eggs - it’s a dreamy way to make your own customized recipe. Best part? This breakfast dish only requires one pan, and that means everything is cooked in one pan. This way, all the delicious flavors team up to create one amazing dish.

So, here’s the recipe for this amazing one pan breakfast dish.

Pinch out sausages prior to cooking them in a little oil. You can cook whole sausages if you like, but I just want to add more depth to the flavors. Once the sausages are cooked, stir fry the veggies until they are slightly tender. At this stage, you can add your favorite veggies and customize this one pan breakfast dish.

I’ve also added in a few spices including ground cumin, garam masala and paprika. If you want to spice it up, add a little red chili powder or chopped green chilies.

Now, the fun part. Break the eggs on top, and cook them to your liking. Runny yolk or well-cooked - it’s your preference.

And there you go. A beautiful breakfast dish packed with all the goodness.

Ingredients

  • 1 tablespoon oil
  • 1 garlic clove minced
  • 6 chicken sausages pinched out
  • ½ cup chopped cauliflower florets
  • ½ cup chopped bell peppers capsicum
  • ½ cup chopped green beans
  • ½ cup peeled and chopped potatoes
  • ½ cup chopped tomatoes
  • ½ cup chopped coriander cilantro leaves
  • 1 teaspoon ground cumin cumin powder
  • 1 teaspoon paprika
  • ½ teaspoon garam masala
  • 4 eggs
  • Salt and pepper to season
  • Coriander cilantro leaves, to garnish

Instructions

  • Heat oil in a frying pan over medium-high heat. Add garlic. Sauté, stirring occasionally, for one minute or until fragrant. Add chicken sausage. Cook, stirring, for 5-6 minutes or until browned.
  • Add vegetables. Add ground cumin, paprika and garam masala. Season with salt and pepper. Sauté, stirring occasionally, for 3-4 minutes or until tender.
  • Break the eggs on top. Cook for 2-3 minutes or until the whites are set. Or cook eggs to your liking.
  • Garnish with coriander (cilantro) leaves.

Notes

- Substitute chicken sausages with your favorite sausage
- For a vegetarian version of the recipe, substitute sausages with paneer
- You can add your favorite veggies - spring onions (scallions), mushrooms, green peas
