Ingredients

  • 1 tablespoon oil
  • 1 garlic clove minced
  • 6 chicken sausages pinched out
  • ½ cup chopped cauliflower florets
  • ½ cup chopped bell peppers capsicum
  • ½ cup chopped green beans
  • ½ cup peeled and chopped potatoes
  • ½ cup chopped tomatoes
  • ½ cup chopped coriander cilantro leaves
  • 1 teaspoon ground cumin cumin powder
  • 1 teaspoon paprika
  • ½ teaspoon garam masala
  • 4 eggs
  • Salt and pepper to season
  • Coriander cilantro leaves, to garnish

Instructions

  • Heat oil in a frying pan over medium-high heat. Add garlic. Sauté, stirring occasionally, for one minute or until fragrant. Add chicken sausage. Cook, stirring, for 5-6 minutes or until browned.
  • Add vegetables. Add ground cumin, paprika and garam masala. Season with salt and pepper. Sauté, stirring occasionally, for 3-4 minutes or until tender.
  • Break the eggs on top. Cook for 2-3 minutes or until the whites are set. Or cook eggs to your liking.
  • Garnish with coriander (cilantro) leaves.

- Substitute chicken sausages with your favorite sausage
- For a vegetarian version of the recipe, substitute sausages with paneer
- You can add your favorite veggies - spring onions (scallions), mushrooms, green peas
