Heat oil in a frying pan over medium-high heat. Add garlic. Sauté, stirring occasionally, for one minute or until fragrant. Add chicken sausage. Cook, stirring, for 5-6 minutes or until browned.
Add vegetables. Add ground cumin, paprika and garam masala. Season with salt and pepper. Sauté, stirring occasionally, for 3-4 minutes or until tender.
Break the eggs on top. Cook for 2-3 minutes or until the whites are set. Or cook eggs to your liking.
Garnish with coriander (cilantro) leaves.
