Cauliflower fried rice. Bursting with mouth watering flavors, this low carb version of your favorite fried rice is a cinch to make and downright delicious. Slightly sweet and nutty cauliflower is combined with vibrant veggies, scrambled eggs and soy sauce to create a perfectly balanced vegetarian meal. Perfect way to turn your favorite vegetable into a tantalizing meal that your taste buds will love.

I’ve never met a vegetable I don’t like. Well, including the cauliflower used in this recipe. Apart from a quick stir fry or whole cauliflower baked to perfection, there are plenty of ways to enjoy this cruciferous vegetable. One among them is cauliflower fried rice.

What is cauliflower rice?

You might be very familiar with this low carb version of regular rice - rice made from cauliflower. Although it’s easily available from the frozen aisle of your local supermarket, trust me, it’s super easy to make at home. Just chop the cauliflower, place it in the grinder, and pulse a few times to convert them into coarse grains. Make sure you don’t grind it too long, the rice will become soggy. And done! Super simple cauliflower rice to make your favorite fried rice!

How do you make cauliflower fried rice?

In general, you just need to follow the same tips and tricks of making a simple fried rice. You’re free to adjust the sauces and veggies to your taste, but remember they’re are the key tastemakers in this recipe. In short, it’s the kind of dish you can make with ingredients you have on hand.

Speaking of the simple technique to make this fried rice extra delicious, make sure you have everything ready before you start. Start with sautéing garlic in a little oil followed by veggies. I opted for whites of spring onions (scallions), carrots and green peas. Once the veggies are crisp tender, stir fry the cauliflower rice alongside a little soy sauce and sesame oil. And you have the very basic cauliflower fried rice.

Now, depending on your personal preference, you can play around with the ingredients, and add your own customized touch with shrimp and chicken.

This is one amazing fried rice featuring the deliciousness of cauliflower. Believe me, you’ll never go back to store-bought cauliflower rice again.

Ingredients

  • 1 large head cauliflower separated into 1-inch florets
  • 2 tablespoons + 2 teaspoons oil
  • 2 eggs whisked
  • 1 garlic clove chopped
  • ½ cup chopped carrots
  • ½ cup green peas I used frozen peas
  • ¼ cup chopped whites of spring onions scallions
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • A pinch of red pepper flakes red chili flakes
  • Chopped spring onions scallions, to garnish

Instructions

  • Trim the cauliflower florets, cutting away as much stem as possible. Place florets (in batches) in the food processor. Pulse until the mixture resembles couscous. Set aside.
  • Heat 2 teaspoons oil in a large wok or frying pan over high heat. Add eggs, and cook until scrambled, stirring occasionally. Remove egg from the pan and transfer to a plate.
  • Add 1 tablespoon oil to the same pan. Once hot, stir fry garlic for few seconds or until aromatic. Add carrots, green peas and whites of spring onions (scallions). Stir fry for 4 minutes or until the vegetables are crisp tender.
  • Add cauliflower rice, soy sauce, sesame oil and red pepper flakes. Stir to combine. Stir fry for about 2 minutes.
  • Add eggs. Stir to combine. Heat through. Serve immediately.
  • Garnish with chopped spring onions (scallions).
