Cauliflower crust pizza – absolutely perfect for your pizza cravings when you want to eat healthy.

It’s hard to believe, there was a time in my life when I really hated cauliflower. The fact is I adore this vegetable now. Now I think anything made with cauliflower is simply delicious and adds a wow factor to your meal. Seriously, your likes and preferences always change as you grow older.

These days I make this cauliflower crust pizza whenever I want to turn my fast food craving into a healthy, guilt-free treat. Of course, this crust is not as crispy and chewy as the real one, but you could enjoy it with your favorite toppings.

Riced cauliflower is flavored with herbs and cheese. Just don’t skimp on the herbs. It imparts a wonderful flavor to the crust. In the end, the crust doesn’t even taste like cauliflower at all.

Cauliflower Crust Pizza

Total Time 1 hour

Ingredients

For the Pizza Crust:

  • 1 small head cauliflower, cut into florets
  • ½ tsp minced garlic
  • 1 large egg
  • 2 tsp Italian seasoning
  • ½ cup mozzarella cheese
  • Salt and pepper, to season

For the Topping:

  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1 small green bell pepper (capsicum), chopped
  • 3-4 large button mushrooms, chopped
  • 12- 14 cherry tomatoes, cut in halves
  • 8-10 black pitted olives, cut in halves
  • ¾ cup mozzarella cheese

Instructions

    To Make the Pizza Crust:

    1. Preheat oven to 220 C.
    2. Place the cauliflower florets in a blender, and give it a quick whizz to make the riced cauliflower. Do this in batches, if needed.
    3. Place the riced cauliflower in a microwave safe bowl and cover with a lid. Microwave on high for 10 minutes.
    4. Place riced cauliflower in a large bowl. When cooled, squeeze out as much water as possible.
    5. Combine riced cauliflower, garlic, egg, Italian seasoning and cheese in a large bowl. Season with salt and pepper.
    6. Line a large baking tray with baking paper. Press the cauliflower mixture firmly onto the tray as thin as possible. Bake for 20 minutes or until golden.

    Add the Topping:

    1. When the crust is done, spread the tomato paste on it. Sprinkle with Italian seasoning. Add the cheese. Then add all the veggies. Place it back in the oven, and bake for another 10 minutes.
