I can’t deny the fact that slow cooking is the best way to bring out maximum flavor from meat. Come cooler evenings, slow cooking is on fire in my household. If you love a comforting meal at the end of a long day, this recipe is just for you. And it helps you to make the ultimate flavorful curry for your next dinner. 

Slow cooker Indian beef curry. Distinguished from regular curry in terms of taste and flavor, think of slow cooked curry as more rich and flavorsome than time consuming stovetop version. Of course, it’s loaded with spices and other aromatics, but comes with a “set and forget” feature. Load your slow cooker in the morning and get ready to dig into delicious saucy curry in the evening. Here’s my rundown on the ingredients and method to make the best curry.

Slow Cooker Indian Beef Curry Recipe

Stir frying - Even though you can add the meat straight into the slow cooker, I highly recommend browning over high heat. This will ensure maximum flavor. Again, get the best cut for the curry, like chuck steak. You’ll also need to sauté onions alongside some ginger, garlic, spices, and broth (stock).

Slow cook - All you need to do is add all the ingredients to your slow cooker including browned meat, sautéed spices and coriander (cilantro) leaves.

Ingredients

  • 2 tablespoons oil or ghee
  • 1 kg chuck or braising steak cut into 3 cm cubes
  • 1 cup chopped onions
  • 2 garlic cloves peeled and chopped
  • 2 cm fresh ginger peeled and chopped
  • ½ teaspoon ground turmeric
  • 2 teaspoons ground coriander
  • 1 teaspoon garam masala
  • ½ teaspoon ground cumin
  • ½ teaspoon red chili powder
  • 1 cup beef broth beef stock
  • ½ cup water
  • 3 cm cinnamon stick
  • 1 dried bay leaf
  • 2 tablespoons chopped coriander cilantro leaves
  • Salt to taste
  • Chopped coriander cilantro leaves, to garnish
  • Naan or rice to serve

Instructions

  • Add 1 tablespoon oil or ghee to a frying pan over high heat.
  • Add beef and fry in batches, for 2-3 minutes or until browned on all sides.
  • Remove from heat and tip into slow cooker.
  • Meanwhile add remaining oil to the same pan.
  • When hot, add onions, garlic and ginger. Sauté, stirring occasionally, for about 2-3 minutes or until the onions are brown.
  • Add turmeric, coriander, garam masala, cumin and red chili powder. Sauté, stirring, for a minute or until fragrant.
  • Add beef broth (stock). Stir. Bring to a boil. Simmer for about 2 minutes.
  • Transfer to the slow cooker.
  • Add beef.
  • Add cinnamon stick and bay leaf. Season with salt.
  • Add coriander leaves. Stir. Cover the slow cooker with lid.
  • Cook for 8 hours on low or 4 hours on high.
  • Garnish with coriander (cilantro) leaves.
  • Serve with naan or rice.

    I'm just making this now and it doesn't have much liquid in it 🤔 should I add more beef stock?

      Low setting would be 200 F or 87°C to 93°C, and 300 F or 149 C for high setting in a slow cooker.

    I have added more stock with water a dash of red wine and a bit of flour to the mixed beef and spices before I added liquid - looking for a thicker constituency
