Ingredients

  • 2 tablespoons oil or ghee
  • 1 kg chuck or braising steak cut into 3 cm cubes
  • 1 cup chopped onions
  • 2 garlic cloves peeled and chopped
  • 2 cm fresh ginger peeled and chopped
  • ½ teaspoon ground turmeric
  • 2 teaspoons ground coriander
  • 1 teaspoon garam masala
  • ½ teaspoon ground cumin
  • ½ teaspoon red chili powder
  • 1 cup beef broth beef stock
  • ½ cup water
  • 3 cm cinnamon stick
  • 1 dried bay leaf
  • 2 tablespoons chopped coriander cilantro leaves
  • Salt to taste
  • Chopped coriander cilantro leaves, to garnish
  • Naan or rice to serve

Instructions

  • Add 1 tablespoon oil or ghee to a frying pan over high heat.
  • Add beef and fry in batches, for 2-3 minutes or until browned on all sides.
  • Remove from heat and tip into slow cooker.
  • Meanwhile add remaining oil to the same pan.
  • When hot, add onions, garlic and ginger. Sauté, stirring occasionally, for about 2-3 minutes or until the onions are brown.
  • Add turmeric, coriander, garam masala, cumin and red chili powder. Sauté, stirring, for a minute or until fragrant.
  • Add beef broth (stock). Stir. Bring to a boil. Simmer for about 2 minutes.
  • Transfer to the slow cooker.
  • Add beef.
  • Add cinnamon stick and bay leaf. Season with salt.
  • Add coriander leaves. Stir. Cover the slow cooker with lid.
  • Cook for 8 hours on low or 4 hours on high.
  • Garnish with coriander (cilantro) leaves.
  • Serve with naan or rice.
