How To Make Shrimp Fried Rice
The first step is, obviously, prepping the shrimp (prawns). Make sure you remove the whole shell including tail and head. When done, remove the vein as well. They will also need a good rinse under cold running water.
Marinating the shrimp helps them absorb all the beautiful flavors from soy sauce. While cornstarch (corn flour) add a light crispy coating, the addition of salt and pepper is totally essential. The marinated prawns are cooked in a wok over medium heat until just done.
Next, scramble the eggs in the same pan. Lightly whisk the eggs before adding to the wok to ensure even color. Remove the scrambled eggs from the pan.
Now, let’s make this quick shrimp fried rice over high heat. High heat simply means quick cooking and that’s what makes fried rice the easiest weeknight meal.
Quickly stir fry some garlic followed by onions. When the onions turn soft and translucent, add the veggies. I used bell peppers, spring onions and carrots. Once they are tender, all the precooked ingredients- shrimp (prawns), eggs and rice gets a quick stir fry.
The classic Asian seasonings used in this recipe include dark soy sauce, regular soy sauce and sweet chili sauce. If you love the bold flavors of Shaoxing wine and sesame oil, add them to the stir fry.

Ingredients
- 500 g shrimp (prawns), peeled and deveined
- 2 teaspoons soy sauce
- 1 teaspoon cornstarch (corn flour)
- 2 tablespoons oil
- 2 eggs, lightly whisked
- 2 garlic cloves, peeled and chopped
- 1/4 cup chopped onions
- 1/4 cup chopped white of spring onions (scallions)
- 1/4 cup chopped carrots
- 1/4 cup chopped bell peppers (capsicum)
- 2 cups cooked rice
- 1 teaspoon dark soy sauce
- 1 tablespoon soy sauce
- 2 teaspoons Shaoxing wine (optional)
- 1/4 teaspoon sesame oil (optional)
- 1 teaspoon sweet chili sauce
- Salt and pepper to taste
- Chopped spring onions or scallions, to garnish
Instructions
- Place shrimp (prawns) in a bowl. Add cornstarch and soy sauce. Season with salt and pepper. Toss to coat.
- Place a wok or frying pan over medium heat.
- Add 1 tablespoon oil. Arrange shrimp in a single layer. Fry for 3-4 minutes on each side. Remove from pan. Set aside.
- Increase heat to high.
- Add 1 tablespoon oil. Add eggs. Cook, stirring, to scramble the eggs. Remove from pan. Set aside.
- Add garlic. Stir fry for 30 seconds.
- Add onions. Stir fry for 2-3 minutes or until soft and translucent.
- Add spring onions (scallions), carrots and bell peppers (capsicum). Stir fry for 5 minutes or until the vegetables are tender.
- Add cooked rice, fried shrimp and scrambled eggs.
- Add dark soy sauce, soy sauce, sweet chili sauce, wine (if using) and sesame oil (if using). Season with salt and pepper.
- Stir fry for 2 minutes.
- Garnish with chopped spring onions (scallions).
Notes
- Use frozen peeled prawns for easy dinner prep
- The preparation time does not include time required to clean the shrimp (prawns)
- Customize this recipe with your favorite veggies like green peas, corn, green beans and bean sprouts
