The exotic avocados are well-known for their nutritional qualities that have actually contributed to their recent popularity. I’m literally obsessed with their beautiful vibrant green color, smooth texture and unique flavor. And yes, a simple addition to your morning toast is the best way to start enjoying the goodness of this lovely fruit.

But when you want to level up your avocado game, it’s time to try this avocado hollandaise recipe. A simple combination of avocados, lemon juice and olive oil. No butter, no eggs - it’s super simple. To make the best healthy hollandaise, make sure all your ingredients are fresh.

Place the avocado in a blender alongside fresh lemon juice. Again, ‘fresh’ is the keyword here. Do not use pre-packed lemon juice in this avocado hollandaise recipe.

Next up, give it a quick whizz to make a smooth purée. At this stage, pour in some hot water to emulsify the sauce. Now, drizzle olive oil through the opening on the blender lid. Continue the pureeing process until you get a silky smooth sauce that you can drizzle just like your regular hollandaise sauce.

Ingredients

  • 1 avocado peeled and chopped
  • Juice from 1 small lemon
  • ¼ cup hot water
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  • Place avocado and lemon juice in a blender. Process to a smooth paste.
  • Pour in hot water. Process again.
  • With the blender ‘on’, drizzle with olive oil. Process to make smooth paste.
  • Season with salt and pepper.
  • Serve with grilled steak, fish or poached eggs.
