How To Make Paneer Puffs
Step 1 - Prepare the paneer filling
Heat oil in a pan. Add finely chopped onion, grated ginger, finely chopped bell peppers (capsicum), frozen green peas and crumbled paneer. Mix and sauté until all the veggies are tender. Stir in the spices, turmeric, chili powder, garam masala and cumin. Cook for another 3-4 minutes. Add chopped fresh coriander (cilantro) and ketchup (tomato sauce), then remove the pan from the heat. Allow the filling to cool completely before assembling the puffs.
Step 2 - Prep the puff pastry
Preheat your oven according to the puff pastry package instructions. Thaw the pastry sheets and cut into equal squares or rectangles.
Step 3 - Fill and bake the puffs
Place a spoonful of cooled paneer filling on the pastry sheets, fold, and seal. Avoid overfilling the pastry and leave space between each one while baking. Baking time depends on the size of the puffs, the pastry brand and your oven.

Ingredients
Filling:
- 1 tablespoon oil
- ¼ cup chopped onions
- 1 teaspoon minced ginger
- ¼ cup chopped bell peppers (capsicum)
- ¼ cup green peas
- 1 cup crumbled paneer
- ¼ teaspoon ground turmeric
- ½ teaspoon ground cumin
- ½ teaspoon red chili powder
- 1 teaspoon garam masala
- 1 tablespoon chopped coriander (cilantro) leaves
- 1 tablespoon tomato sauce (ketchup)
- Salt to taste
Puffs:
- 2 store bought puff pastry sheets, thawed
- 1 beaten egg, for brushing (optional)
Instructions
Prepare the filling:
- Heat oil in a large frying pan over medium-high heat.
- Add onions, ginger, bell peppers (capsicum), green peas, and paneer. Season with salt.
- Cook, stirring occasionally, for about 3-4 minutes or until the veggies are tender.
- Add ground turmeric, ground cumin, chili powder and garam masala. Stir to combine.
- Cook for about 2 minutes.
- Stir in coriander (cilantro) leaves and ketchup (tomato sauce). Remove from heat. Cool completely.
Assemble and bake puffs:
- Preheat oven to 200ºC (400ºF). Line a large baking tray with baking paper.
- Cut each pastry sheet into 6 rectangles.
- Place one pastry sheet on a flat work surface.
- Add 2 tablespoons of the cooled paneer filling to one side of the pastry sheet. Make 3 slits on the other side of the pastry sheet.
- Fold the pastry over the filling and press the edges firmly together. You can use a fork to do this.
- Arrange the puffs on a lined tray, brush with egg or milk if desired, and bake for approximately 20-25 minutes, or until the pastries are risen and golden.
- Cook for a few minutes before serving.
Notes
- Green peas - I used frozen green peas
- Beaten egg - Substitute with 2 tablespoons milk if you like.
- Serving suggestion - Serve it with Mint chutney, tamarind chutney, tomato sauce (ketchup), coffee, or masala chai. However, these puffs taste delicious on their own, so the accompaniments are optional.
- Cheesy puffs - Add a small amount of your favorite cheese to make the pastry extra cheesy.
- Vegetables - Feel free to add your favorite veggies like corn, potatoes, and grated carrots.
- Freezer friendly - Assemble and freeze unbaked puffs for convenient future baking.
