Oven Baked Chicken And Rice Recipe
Start with marinating chicken. I have opted for tandoori paste in this recipe but you can use your favorite curry paste to make this dish. Make sure the chicken pieces are coated really well with the masala. Cover and refrigerate for about 30 minutes, if time permits.
Next, soak rice. Even though you can use any kind of rice in this recipe, I prefer basmati rice. The long strands of basmati rice turn fluffy and perfectly tender when baked in the oven. Also, it absorbs the flavors and moisture without turning mushy.
Now, let’s combine all the elements and make this oven baked chicken. First, combine together onions, vegetables, garlic, chicken stock and half of tandoori paste in a baking pan. Stir. Place chicken on top. Bake. After 15 minutes, remove chicken, and add rice, coconut milk and oil. Season with salt. Arrange chicken on top. Bake again for another 30 minutes.
Top with plenty of coriander leaves. Serve this magical tray bake with your favorite accompaniments – raita, crunchy pappadums and mango chutney.
