Spicy Potato Wedges | Video

Spicy potato wedges. Tossed in aromatic spices and baked to perfection, this spiced up version of your favorite wedges is totally addicting. Needless to say, these perfectly crispy spicy appetizers are guaranteed to stop anyone in their tracks.

If you are anything like me, I know you already have a collection of the best roast potato recipes. The truth is potatoes are way more versatile than you think. Obviously, when it comes to roasting potatoes, I’m never stuck on ideas. There are umpteen ways to spruce up the humble potato, and think beyond the old fashioned simple whole roast potatoes and potato wedges.

So, how do you take your favorite potato wedges to the next level? Add spices, and make these spicy potato wedges. Simple as that. Potatoes really taste great with the aromatic flavor of spices, so you can mix and match to create an amazing appetizer or even a side dish. 

These spicy potato wedges are pretty simple. Cut the potatoes into beautiful wedges. Then parboil them so the potatoes will absorb all the flavors. Boil them for about 3 minutes until they’re slightly cooked through. Alternatively, you can microwave the potatoes. Place the wedges in a single layer in a plate in the microwave. Microwave on high for about 5 minutes. Done. Perfectly parboiled potatoes.

Now, bake the potato wedges. Start with tossing them in spices - ground cumin, ground coriander and garam masala. Add a sprinkle of crushed kasuri methi or dried fenugreek leaves. And don’t forget to season. The spiced wedges are cooked in a preheated oven for about 20-25 minutes.

Perfectly crispy golden spicy potato wedges. Dip in your favorite sauce or chutney for an amazingly delicious appetizer. Yum!

Ingredients

  • 5 medium potatoes peeled and cut into wedges
  • 2 garlic cloves minced
  • ½ teaspoon ground cumin cumin powder
  • ½ teaspoon ground coriander coriander powder
  • ½ teaspoon garam masala
  • ½ teaspoon cayenne pepper
  • 2 tablespoon oil
  • ½ teaspoon dried fenugreek leaves kasuri methi
  • Salt and pepper to season
  • Water
  • Chopped coriander cilantro leaves, to garnish
  • Mint chutney yogurt dip, tomato sauce, sweet chili sauce, to serve

Instructions

  • Boil a large pot of water. Season with salt. Add potato wedges. Cook for 3 minutes or until parboiled. Drain. Set aside. Cool slightly.
  • Preheat oven to 250C / 450F. Line a baking tray with parchment paper.
  • Transfer potatoes onto a baking tray. Add garlic cloves, ground cumin, ground coriander, garam masala, cayenne pepper, oil and dried fenugreek leaves. Season with salt and pepper. Toss.
  • Arrange wedges in a single layer. Bake for about 20-25 minutes, turning them over once after 10 minutes, until potatoes are crisp and golden.
  • Garnish with coriander (cilantro) leaves. Serve with your favorite dip.

- Sub potatoes with sweet potatoes for a 'low carb' version
- If cayenne pepper is not easily available, use red chili powder
