Aloo Paratha | Flatbreads Stuffed with Mashed Potatoes

Aloo paratha - Nothing tastes as good as fresh, homemade parathas or flatbreads stuffed with spiced mashed potatoes. Serve them up with spicy pickle, yogurt and a dollop of ghee for a healthy breakfast or tasty and satisfying dinner.

Do you love parathas (Indian flatbreads)? I do. For all paratha lovers out there, I’ve an amazing way to enjoy them. Yes, I’m talking about classic aloo paratha that’s all about parathas stuffed with spiced mashed potatoes.

Wait, did I say mashed potatoes? Honestly, I love them. And it’s even better when spiced. Now imagine your favorite mashed potatoes stuffed in a flatbread. Totally yum!

In my opinion, stuffed parathas are similar to one pot meals. Plus, you don’t even need to think about whipping up an extra side dish.

This aloo paratha recipe is easy to make and addictingly good. A few pantry staples and humble potatoes are all that you need to make this recipe. You see, it’s that simple.

Ready to make these parathas stuffed with potatoes? Ok, let’s start.

To make these tasty stuffed flatbreads, you’ll need two or three medium sized potatoes. Peel them, cook them, mash them, and they’re ready to go in the flatbreads. The addition of ground cumin will make them more flavorful. And a pinch ofchilly powder will bring up the heat.

Again, you can see that I’ve used potatoes in this recipe. Well, potatoes in flatbread will give you aloo paratha. If you don’t like potatoes, you can substitute them with chickpeas for chana paratha, or cauliflower for gobi paratha. Or even better, how about a mixed vegetable paratha?

Remember to serve them warm with mango pickle and a dollop of ghee.

Aloo Paratha | Flatbreads Stuffed with Mashed Potatoes

Healthy and delicious Indian style flatbreads stuffed with spiced mashed potatoes

Ingredients

  • 2 - 3 medium sized potatoes
  • 1 teaspoon cumin seeds
  • 1 teaspoon Kashmiri chili powder
  • A pinch of ground turmeric
  • Salt to taste
  • 2 and ½ cups whole wheat flour atta
  • Salt to taste
  • Water

Instructions

To make potato filling

  • Wash and peel potatoes, then cut them into cubes. Place cubed potatoes in a pan and cover with water. Place it on high heat and bring to boil. Then lower the flame and cook potatoes. When done, leave it to cool.Now you can use a spoon or potato masher to mash the potatoes.
  • Meanwhile place a teaspoon of cumin seeds in a pan over low flame and roast them.Once cooled grind it into a fine powder.
  • Now place the mashed potatoes in a deep bowl and mix in all the spices ( cumin seeds, chilly powder and ground turmeric) along with enough salt.
  • The filling for aloo paratha is ready.

To make the flatbreads

  • Place 2 ½ cups of whole wheat flour in a deep bowl. Sprinkle with salt, and add enough water to knead it into soft dough.
  • Make big lemon sized balls out of the dough.
  • Flatten them slightly and place a tablespoon of mashed potatoes on them. Shape them into balls again, and make sure the dough covers the potatoes on all sides. Now you can roll them out. But make sure they are not too thin. Otherwise potatoes may come out and make the entire rolling out process too sticky. However, while rolling out, you can sprinkle with more flour, if needed.

To cook aloo parathas

  • Heat a pan or tawa over medium flame. Place the flatbreads on them, one at a time, and cook both sides. Brush the parathas with oil or ghee, if desired.
