I think in today’s time-challenge world, ‘quick and easy’ is the norm. Well, who has the luxury of having hours to spend in the kitchen after a long day? So, I’d say, keep weeknight cooking simple and less time-consuming. 

Easy-to-make dinners without compromising on taste and nutritional value should be your focal point. With veggies, go for easy prep ideas like the trimmed beans in this sauteed green beans recipe. Cooking whole beans is such a smart idea to minimize the prep time.

This recipe is all about celebrating the vibrant green color of these green beans. Bright and cheery, they really remind me of the warmth of sunshine in summer. 

The stir fry tastes best when the beans are tender but has a slight crisp texture. Do not overcook the green beans if you want to retain the bright green color.

The best part is that this sauteed green beans is a cinch to make. Before you start with the recipe, just remove the woody ends of green beans. Now all you need to do is splutter few cumin seeds, sauté sliced garlic, and stir fry green beans along with a touch of ground turmeric. I like to add a splash of water to facilitate the cooking process without burning them.

Ingredients

  • 1 tablespoon oil
  • ½ teaspoon cumin seeds
  • 2 garlic cloves sliced
  • 2 cups green beans ends trimmed
  • ½ teaspoon ground turmeric turmeric powder
  • ½ teaspoon red chili flakes optional
  • Salt to taste
  • 2 tablespoon water
  • Curry leaves
  • Steamed rice to serve

Instructions

  • Heat oil in a frying pan over medium-high heat. Add cumin seeds. Allow to splutter. Add garlic cloves. Sauté, stirring occasionally, for 1 minute or until aromatic.
  • Add green beans, ground turmeric and red chili flakes (optional). Season with salt. Stir to combine. Add water. Cook, covered, stirring occasionally, for 3-4 minutes or until crisp tender. Garnish with curry leaves.
