This special fried rice is essentially a smart version of your favorite chicken or egg fried rice. It’s simple, highly nutritious, and super delicious. The first time I made this fried rice dish was several months ago when I wanted to whip up a dish that incorporates different kinds of protein. And this recipe just turned out to be perfect. It’s the kind of meal you can prepare when you’ve plenty of leftovers in your fridge. The right kind of recipe to bring everything together in a delicious dish.
Apart from the deliciousness factor, the one special thing that makes it amazing is customization. You can choose your favorite protein (chicken, shrimp, ham), and load it with seasonal veggies. My favorites are chicken and shrimp mixed with green beans, carrots and peas. The best part is there are no rules when it comes to the ingredients you need in your rice. Freestyle with whatever you have on hand.
How to make special fried rice
Start with heating up your wok or a large frying pan. Just be sure the heat is on high as the cooking process is going to be really quick. Swirl the pan with a little oil followed by sautéing the onions until they are soft and translucent. Next up, a quick stir fry of garlic.
Now, the vibrant veggies are stir fried until crisp tender. Move everything to one side, and break two eggs on the other side of the pan. Using a spatula, scramble and cook them perfectly before stirring with the rest of the ingredients.
Now it’s time to stir fry the key ingredient rice with the rest of the mixture. As for the sauces, a dash of soy sauce, white vinegar and sesame oil are all need to flavor this very special fried rice.
And done. Amazingly flavorful fried rice for any day of the week.

An easy and flavorful fried rice recipe to help you make a delicious and satisfying dinner even on busy days.
Ingredients
- 2 cups basmati or long grain rice (or 4 cups cooked rice)
- 2 tablespoons oil
- 300 g chicken, sliced
- 300 g prawns (shrimp), peeled and deveined
- ½ cup chopped onions
- 1 large garlic clove, peeled and chopped
- 1 cup chopped vegetables (green beans, carrots, green peas and white of spring onions or scallions)
- 2 eggs
- 2 tablespoons soy sauce
- 1 teaspoon white vinegar
- 1 teaspoon sesame oil
- ¼ cup chopped spring onions or scallions, to garnish
Instructions
- Cook rice according to the instructions on the packet. Set aside. Leftover rice works best in this recipe.
- Place a large wok or frying pan on high heat. Add 1 tablespoon oil. When the oil is hot, add chicken and prawns (shrimp). Stir fry for 5 minutes or until cooked through. Remove from pan. Set aside.
- To the same pan, add remaining oil. Add onions, and saute for about a minute or until soft and translucent. Add garlic and fry for 1 minute or until golden.
- Add vegetables. Stir fry for 2 minutes. Move everything to one side and break eggs into the other side of the pan. Scramble the eggs, and cook. Stir eggs into vegetable mixture. Add cooked rice. Stir fry for 3 minutes.
- Add soy sauce and white vinegar. Stir fry for 1 minute. Add sesame oil. Stir fry for 2 minutes.
- Remove from heat.
- To serve, divide fried rice among four bowls. Garnish with spring onions (scallions).
Notes
- If the prawns are large, cut them in halves
- Sub in whatever veggies you have on hand to make this fried rice super nutritious
