Cook rice according to the instructions on the packet. Set aside. Leftover rice works best in this recipe.
Place a large wok or frying pan on high heat. Add 1 tablespoon oil. When the oil is hot, add chicken and prawns (shrimp). Stir fry for 5 minutes or until cooked through. Remove from pan. Set aside.
To the same pan, add remaining oil. Add onions, and saute for about a minute or until soft and translucent. Add garlic and fry for 1 minute or until golden.
Add vegetables. Stir fry for 2 minutes. Move everything to one side and break eggs into the other side of the pan. Scramble the eggs, and cook. Stir eggs into vegetable mixture. Add cooked rice. Stir fry for 3 minutes.
Add soy sauce and white vinegar. Stir fry for 1 minute. Add sesame oil. Stir fry for 2 minutes.
Remove from heat.
To serve, divide fried rice among four bowls. Garnish with spring onions (scallions).
