Chipotle mushroom quesadilla. These filled tortillas are all about the deliciousness of mushrooms, but upgraded to the next level. Sautéed mushrooms are spiced with a subtle touch of chipotle seasoning to create the best vegetarian quesadillas ever. It guarantees fresh flavors in every bite, especially when paired with cooling avocado yogurt sauce.

Whether you are a culinary genius or just love cooking delicious food, a good recipe is crucial to create the best food. Contrary to popular belief, simple vegetables like mushrooms can toast as good as their non-vegetarian counterparts. 

Chipotle mushroom quesadilla. A simple tortilla wrap loaded with tasty mushrooms that are spiked with a touch of chipotle spice mix. This spice literally takes these quesadillas from good to exceptionally tasty. Trust me, these are out-of-this-world delicious!

Chipotle Mushroom Quesadilla Recipe 

  1. Make the mushroom filling - With the mushrooms, you can choose your favorite, portobello mushrooms taste amazing in this dish. Slice them thinly, and add it to a hot pan. Once they are cooked, stir in some garlic until you get a beautiful aroma. As I mentioned, the chipotle seasoning definitely takes it to the next level. It’s a must addition that pairs really well with the mushrooms. 
  2. Make mushroom quesadillas - Fill the tortillas one at a time. Place mushrooms and grated cheese on one side of the tortilla and fold over. You’ll need to cook both sides until they are crispy and browned.

Ingredients

Mushroom filling:

  • 500 g portobello or cup mushrooms sliced
  • 1 tablespoon oil
  • 2 garlic cloves peeled and chopped
  • 2 teaspoons chipotle seasoning homemade or store bought
  • Salt and pepper to taste

Quesadillas:

  • 4 tortillas flour, corn or gluten free
  • 1 cup grated cheese cheddar or mozzarella

To serve:

  • Avocado yogurt dip

Instructions

  • Heat oil in a frying pan over medium-high heat.
  • Add mushrooms. Sauté, stirring very gently occasionally, for 3-5 minutes or until cooked. Season with salt and pepper.
  • Add garlic. Sauté for about 30 seconds or until fragrant.
  • Add chipotle seasoning. Stir and cook for about 30 seconds.
  • Remove from pan.
  • Wipe the pan with a paper towel.
  • Reduce heat to medium.
  • Place one tortilla in the pan.
  • Top with 1-4 cup cheese and ¼th of mushroom filling, and spread evenly over half the tortilla.
  • Fold the tortilla over to form a semi-circle. Cook for 2-3 minutes or until golden underneath.
  • Turn and cook for a further 1-2 minutes or until golden.
  • Repeat with the remaining tortillas, cheese and mushroom filling.
  • Cut the tortillas in half.
  • Serve with avocado yogurt dip.

Notes

  • Use your favorite mushrooms in this recipe 
  • Mushrooms can be substituted with paneer, chicken and vegetables
  • Add a little butter to the mushrooms while cooking if you like
