Heat oil in a frying pan over medium-high heat.
Add mushrooms. Sauté, stirring very gently occasionally, for 3-5 minutes or until cooked. Season with salt and pepper.
Add garlic. Sauté for about 30 seconds or until fragrant.
Add chipotle seasoning. Stir and cook for about 30 seconds.
Remove from pan.
Wipe the pan with a paper towel.
Reduce heat to medium.
Place one tortilla in the pan.
Top with 1-4 cup cheese and ¼th of mushroom filling, and spread evenly over half the tortilla.
Fold the tortilla over to form a semi-circle. Cook for 2-3 minutes or until golden underneath.
Turn and cook for a further 1-2 minutes or until golden.
Repeat with the remaining tortillas, cheese and mushroom filling.
Cut the tortillas in half.
Serve with avocado yogurt dip.
