I associate good food with incredible flavors. The perfect flavor balance is an essential to create drool worthy meals. And the fact is that you can achieve that even with simple ingredients.

The beautifully green broccoli is undeniably super delicious and highly nutritious. When it comes to healthy eating, simple steamed broccoli with a sprinkle of salt is one of my most favorite snacks. This humble broccoli also makes for an ideal quick lunch packed with nutrition. Simple ingredients with the right balance of flavors brings you deliciousness from all angles.

In this broccoli melts recipe, super green broccoli is topped with grated cheese and stacked on your favorite bread to create the ultimate meal.

The key element in this recipe is definitely the broccoli. All you need to do is remove the stems, chop the florets into small bite sized pieces and sauté in a little oil until tender. Don’t forget a light sprinkle of salt. And some freshly grated garlic to level up the flavor. I also like to add a little Italian seasoning to the sautéed broccoli.

You’ll also need your favorite bread - sourdough, ciabatta, baguettes, panini or even wholemeal bread. I used panini for this broccoli melts recipe, and it tastes amazing when toasted with a little butter. Again, if you’re after a healthy version, skip butter.

Finally, top the toasted bread with broccoli and cheese. Place under the grill (broiler) to melt the cheese. With cheese, go with your favorite - cheddar, mozzarella or provolone.

Trust me, broccoli melts made with simple ingredients is super delicious, and it's definitely one of the best ways to add more veggies to your diet.

Ingredients

  • 1 tablespoon olive oil
  • 1 large head of broccoli
  • 1 garlic clove minced
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon red pepper red chili flakes
  • 4 slices of your favorite bread - sourdough, ciabatta, panini or whole wheat bread (I used panini)
  • 4 tablespoons butter
  • 1 cup grated or 4 slices cheese- sharp cheddar, mozzarella or provolone
  • Salt to taste

Instructions

  • Remove the stem of broccoli and chop the florets into bite-sized pieces. Set aside.
  • Heat oil in a frying pan over medium-high heat.
  • Add broccoli, minced garlic, Italian seasoning and red chili flakes (if using). Season with salt.
  • Cook, stirring occasionally, for 3 minutes or until tender. Set aside.
  • Spread butter on both sides of bread slices. Place bread slices in a frying pan over low heat. Toast them until browned on both sides.
  • Preheat grill.
  • Meanwhile, top the bread slices with broccoli mixture and cheese. Grill for 1-2 minutes or until cheese is bubbling and browned. Serve immediately.

Notes

  • You can steam broccoli if you like. To steam broccoli, cut into florets, sprinkle with salt, minced garlic, chili flakes (if using) and Italian seasoning. Cook until tender and chop into bite sized pieces.
  • Italian seasoning is optional in this recipe. However, it adds a lovely flavor to this dish.
  • Feel free to adjust the amount of chili flakes used in this recipe depending on your taste preferences.
  • For a healthy version, omit butter and toast the bread slices in the toaster.
  • To convert this into a quick and easy breakfast dish, top the melts with fried egg cooked to your liking.
