4slicesof your favorite bread - sourdough, ciabatta, panini or whole wheat bread (I used panini)
4tablespoonsbutter
1cupgrated or 4 slices cheese- sharp cheddar, mozzarella or provolone

Instructions
Remove the stem of broccoli and chop the florets into bite-sized pieces. Set aside.
Heat oil in a frying pan over medium-high heat.
Add broccoli, minced garlic, Italian seasoning and red chili flakes (if using). Season with salt.
Cook, stirring occasionally, for 3 minutes or until tender. Set aside.
Spread butter on both sides of bread slices. Place bread slices in a frying pan over low heat. Toast them until browned on both sides.
Preheat grill.
Meanwhile, top the bread slices with broccoli mixture and cheese. Grill for 1-2 minutes or until cheese is bubbling and browned. Serve immediately.

Notes
You can steam broccoli if you like. To steam broccoli, cut into florets, sprinkle with salt, minced garlic, chili flakes (if using) and Italian seasoning. Cook until tender and chop into bite sized pieces.
Italian seasoning is optional in this recipe. However, it adds a lovely flavor to this dish.
Feel free to adjust the amount of chili flakes used in this recipe depending on your taste preferences.
For a healthy version, omit butter and toast the bread slices in the toaster.
To convert this into a quick and easy breakfast dish, top the melts with fried egg cooked to your liking.
