Banana puffs. Packed with an irresistible banana coconut mixture, these puff pastry parcels taste so delicious. Enjoy them warm straight out of the oven, or dust with icing sugar for an indulgent treat.

Ever since I was introduced to these sweet puffs, I really wanted to create a homemade version. Puffs are usually made with savory filling consisting of egg, vegetables, chicken or meat. So, these banana puffs obviously captivated my attention.

With a few trials and errors, I think I’ve created the most delicious version of the banana filling of the store bought puffs. And honestly, these puffs turned out to be super awesome.

Ok, coming to this banana puffs recipe, first, let’s make the filling. Like the savory chicken and egg puffs, you’ll need to cook the filling separately before covering it in puff pastry sheets. Of course, the key ingredient in these puffs are bananas.

Ghee is one of the super flavorful ingredients in this banana filling. I love the aroma of ghee in homemade dishes. And in this recipe, banana caramelized in ghee takes this dish to a whole new level. It’s incredibly delicious!

So, heat up a little ghee, and fry a few raisins or cashew nuts. Stir in bananas, and let it caramelize in ghee. Once the bananas are caramelized, you’ll also need to add in grated coconut, and give it a quick stir fry.

Depending on the sweetness of the banana, add in some sugar or even jaggery. If you’re after a healthier option, try coconut sugar. Stir in some cardamom powder before you turn off the flame. Cool completely.

Now, place this banana filling on the pastry rectangles, and brush with beaten egg. Finally, bake them, and dust generously with icing sugar to make them super sweet.

Bananas, coconut and ground cardamom filling encased in crispy puff pastry. Finish off with a generous dusting of icing sugar. Heavenly!

Ingredients

  • 1 tbsp ghee or clarified butter
  • 2 tbsp raisins
  • 1 tbsp cashew nuts, chopped (optional)
  • 2 large bananas, chopped
  • 3/4 cup grated coconut
  • 2 tbsp white sugar ( or grated jaggery), or as required
  • 1/2 tsp ground cardamom (cardamom powder)
  • 2 ready-rolled puff pastry sheets, thawed
  • 1 egg, lightly beaten
  • Icing sugar (powdered sugar)

Instructions

  1. Preheat oven to 200C / 400F. Line 2 baking trays with parchment paper. Set aside.
  2. Heat ghee in a frying pan over low-medium heat. Add raisins and cashew nuts (if using). Stir fry for few seconds. Add bananas. Sauté, stirring constantly, for a minute or until the bananas start to caramelize.
  3. Add grated coconut. Sauté, stirring constantly, for 1 minute. Add sugar, and sauté, stirring constantly, for 1 minute. Stir in ground cardamom. Remove from heat. Cool completely.
  4. Place thawed puff pastry sheets on a flat surface. Cut each sheet into 6 rectangles. Place 2 tbsp banana mixture in the middle of each rectangle. Brush the edges with a little water. Fold and press down with your fingers to seal the edges.
  5. Transfer pastry sheets to the baking trays. Brush with beaten egg. Bake for 20-30 minutes or until the pastry is golden. Remove from oven.
  6. Dust with icing sugar before serving.

Notes

- White sugar can be substituted with jaggery or coconut sugar if you like
- You can also substitute ground cardamom with ground cinnamon if you like
