Apple kheer (apple payasam) – Apples pair nicely with the delicate flavors in this beautiful dessert. It’s simple, delicious, and perfect when you’re in need of a quick treat.
I really love sweet apples in desserts. One of my favorites is this caramel apple rose. Oh well, apples are so versatile, there are umpteen ways to cook with them.
This apple kheer (apple payasam or Indian style apple pudding) is an all-rounder which means it’s perfect for both winter and summer. While a warm bowl of pudding keeps you cozy in cooler months, chilled pudding makes for a refreshing treat in summer.
Traditionally, kheer or payasam is basically Indian style pudding that’s made with rice, vermicelli, fruits, legumes or other grains. Over the years, it has undergone major transformations, and you can find so many variations of this delectable dessert now. This apple kheer is a great example. And it’s such a fun and unique way to enjoy apples when they’re in season.
I’ve shared a few kheer recipes over the years. Semiya payasam (sevaiyan kheer or vermicelli pudding), pal payasam (milk and rice pudding), moong dal kheer (parippu payasam), sheer khurma and aval payasam (rice flakes pudding) are my absolute favorites. Now I’ve one more recipe to add to this favorite list – apple pudding.
The very first ingredient you’ll need to make this apple kheer is sweet apple. Choose the sweetest variety for the best pudding ever. Peel them, grate them, and cook them in a dollop of ghee. Of course, you can substitute ghee with oil, but we need as much flavor as possible. Forget about calories for a moment, we’re going to make the ultimate indulgent dessert.
Cook apples until they start to change color and turn mushy. If apples are not cooked, the mixture will curdle when you add milk.
Once apples are cooked, stir in condensed milk and milk. Condensed milk adds the much needed sweetness to this apple kheer. As we have two super sweet ingredients in this recipe, apples and condensed milk, I think you’ll not need additional sugar. Stir in ground cardamom just before you remove it from heat. You can also add your favorite chopped nuts along with cardamom.
I’m totally obsessed with this combo of apples and milk right now. If you haven’t tried this yet, you must because it’s so good.

Apple Kheer | Apple Payasam | Indian Apple Pudding | Video
Classic kheer or payasam made with sweet apples. Quick, easy, and delicious!
Ingredients
- 2 tbsp ghee
- 2 cups peeled and grated apple (approximately 4 large apples)
- 300 g condensed milk
- 1 cup milk
- 1/2 tsp ground cardamom (cardamom powder)
- Apple slices, to garnish
- Pistachios, almonds or cashew nuts, to garnish
Instructions
- Heat ghee in a frying pan over medium heat. Add grated apple, and cook, stirring occasionally, for about 5-6 minutes or until tender and mushy.
- Reduce the heat to low. Add condensed milk and milk. Cook, stirring constantly, for another 5 minutes. Stir in ground cardamom. Heat through.
- Remove from heat. Garnish with sliced apples, pistachios, almonds and cashew nuts.
Notes
- Make sure apples are cooked before adding milk. Otherwise the mixture may curdle.
