Why I Love This Recipe

There’s a reason why a simple rice dish is the ultimate canvas for your culinary creativity. One, it’s easy to make, and second, the rice grains absorb any kind of flavor to create unique dishes. Well, the humble rice has traveled the world, and its versatility is endless. This version focuses on fluffy rice with nutritious egg and taco seasoning.

The recipe starts as a simple Indian style flavored rice highlighting the goodness of eggs paired with the classic taco seasoning. The latter brings in authentic flavor combination of cumin, paprika, red chili powder and oregano. This seasoning is what makes the rice a delectable fusion dish. This amazing combo of taco spices with ginger, garlic, green chilies and curry leaves is absolutely amazing. Trust me, it’s so good!

Key Ingredients In Egg Rice

egg rice ingredients
  • Eggs - Lightly scramble them so they just disappear in the rice.
  • Ginger and garlic - Adds the authentic Indian taste.
  • Taco seasoning - The flavor twist in this recipe.
  • Coriander (cilantro) leaves - Makes the rice vibrant as well as more nutritious.

How To Make Egg Rice

Cook rice - You can use any rice you have on hand in this rice. I really love basmati or long grain, however, jasmine rice also tastes great. Make sure you cook the rice prior to stir frying like fried rice recipes. But, you don’t require day-old rice.

Stir fry rice - Like fried rice, this dish is also quick and easy to make. So, make sure you prep all the ingredients beforehand. Start with stir frying onions, ginger, garlic, green chilies and curry leaves. When the onions get a light brown hue, add eggs and scramble them. Season the scrambled eggs with taco spices and then stir fry with rice and coriander (cilantro) leaves. With a final seasoning from salt and pepper, you dish is ready to be served.
