Egg Rice - Quick And Easy In 15 Minutes

Ingredients

  • 1 tablespoon oil or ghee
  • ½ cup chopped onions
  • 1 garlic chopped
  • 1 cm ginger chopped
  • 1 green chilli chopped
  • 1 sprig of curry leaves
  • 3 eggs lightly whisked
  • 1 tablespoon taco seasoning homemade or store-bought
  • 3 cups cooked rice basmati or long grain
  • ¼ cup chopped coriander (cilantro) leaves
  • Salt and pepper to taste
  • Chopped coriander (cilantro) leaves to garnish (optional)

Instructions

  • Heat oil in a wok or large frying pan over medium-high heat.
  • Add onions, garlic, ginger, green chilies and curry leaves. Saute, stirring, for about 3-4 minutes or until onions starts to brown.
  • Add eggs. Scramble and cook for about 2-3 minutes or until set.
  • Add taco seasoning. Stir fry for 1 minute.
  • Add cooked rice and coriander (cilantro) leaves. Season with salt and pepper.
  • Stir fry for 2 minutes.
  • Garnish with coriander (cilantro) leaves.

Notes

  • Vegetables - Chop vegetables like carrots, green beans and peas, and add to the rice.
  • How to serve - The rice is perfect on its own, however, you can serve it with your favorite curries or vegetable and meat stir fries.
  • Storage instructions - Store in an airtight container in the refrigerator for about 1-2 days.
