Tempura is one of the best deep fried dishes out there, and it’s clearly a very popular appetizer idea. 

Tempura batter recipe. Simply put, veggies or any protein lightly coated in tempura batter are deep fried to golden perfection. The light crunchy coating adds just the right amount of wow factor to this dish. Again, it’s a delicious idea to add a fancy appetizer to your meal without trying too hard. 

Tempura Batter Recipe

Ingredients - The key ingredients include flour, water and egg. Ideally, flour and water need to be in 1:1 ratio, and all the ingredients should be chilled for the best crunchy texture. With water, soda water is the best option to create that beautiful texture that’ll stay crunchy even after a few hours. 

Mix the batter - Contrary to the ‘ideal lump free batter’ idea, some lumps are okay in the batter. To make the batter, add egg to flour, then gradually add in water. After you make the batter, you can leave it in the refrigerator. 

Dip and deep fry -  Once you make the batter, dip the veggies or any protein in the batter and deep fry in medium hot oil.

Ingredients

  • 1 cup all purpose flour plain flour
  • 1 egg lightly whisked
  • 1 cup chilled soda water
  • Sliced vegetables or protein
  • Oil for deep frying
  • tempura dipping sauce to serve

Instructions

  • Heat oil (for deep frying) in a large saucepan over medium heat.
  • Sift flour into a large bowl.
  • Add egg.
  • Add chilled water, gradually, and stir constantly to make a batter with pouring consistency.
  • Make sure there are some lumps in the batter. You can store this batter in the refrigerator for a few minutes if needed.
  • Dip vegetables in batter, shake off excess and add to hot oil. Do not overcrowd the pan.
  • Flip and cook until all sides are golden and the veggies are cooked through.
  • Drain on an absorbent paper towel.
  • Serve with tempura dipping sauce

Notes

  • Only use chilled ingredients
  • Some lumps in the batter is totally okay
  • You can refrigerate the batter for a few minutes, make sure you don’t leave it in the refrigerator for too long
