all purpose flour
plain flour

lightly whisked

chilled soda water
▢
Sliced vegetables or protein

Oil for deep frying

tempura dipping sauce
to serve
Instructions
Heat oil (for deep frying) in a large saucepan over medium heat.
Sift flour into a large bowl.
Add egg.
Add chilled water, gradually, and stir constantly to make a batter with pouring consistency.
Make sure there are some lumps in the batter. You can store this batter in the refrigerator for a few minutes if needed.
Dip vegetables in batter, shake off excess and add to hot oil. Do not overcrowd the pan.
Flip and cook until all sides are golden and the veggies are cooked through.
Drain on an absorbent paper towel.
Serve with
tempura dipping sauce
Notes
Only use chilled ingredients
Some lumps in the batter is totally okay
You can refrigerate the batter for a few minutes, make sure you don’t leave it in the refrigerator for too long
