Ingredients

  • 1 cup all purpose flour plain flour
  • 1 egg lightly whisked
  • 1 cup chilled soda water
  • Sliced vegetables or protein
  • Oil for deep frying
  • tempura dipping sauce to serve

Instructions

  • Heat oil (for deep frying) in a large saucepan over medium heat.
  • Sift flour into a large bowl.
  • Add egg.
  • Add chilled water, gradually, and stir constantly to make a batter with pouring consistency.
  • Make sure there are some lumps in the batter. You can store this batter in the refrigerator for a few minutes if needed.
  • Dip vegetables in batter, shake off excess and add to hot oil. Do not overcrowd the pan.
  • Flip and cook until all sides are golden and the veggies are cooked through.
  • Drain on an absorbent paper towel.

Notes

  • Only use chilled ingredients
  • Some lumps in the batter is totally okay
  • You can refrigerate the batter for a few minutes, make sure you don’t leave it in the refrigerator for too long
