Lachha pyaz or Indian onion salad. In other words, your favorite pickled onions the Indian way. Apart from being an amazing side for your classic Indian meal, they are also great in burgers, wraps and tacos. Best part? You can always tweak the amount of spices to cater your taste preferences.

How To Make Lachha Pyaz or Indian Onion Salad 

Start with peeling and slicing the onions in circles. Separate the rings and transfer them to iced water. This will retain the crunchiness of the onions minus the sharp and pungent flavor. Pro tip: Always use red onions to make this salad. 

Next, transfer soaked onions to a bowl and add all the aromatics. 

The spices used in this recipe include chat masala and red chili powder. If you’re not familiar with chat masala, it’s a combination of  various aromatic spices and is commonly used as a flavor add-on for Indian street foods. A light sprinkle of this masala amps up the flavor to next level. 

Apart from chat masala, I also like to add in red chili powder. Feel free to add more or less chili powder depending on your taste. Last but not least, add a light drizzle of lemon juice. The secret to best tasting onion salad is fresh lemons. 

And finally don’t forget the final seasoning with salt and pepper.

Ingredients

  • 4 large red onions
  • 1 large bowl of iced water
  • 1 tablespoon chaat masala
  • ½ teaspoon red chili powder
  • Juice from 1 lemon
  • Salt black salt for authentic taste
  • 2 tablespoons chopped coriander cilantro leaves

Instructions

  • Cut off the stem end and root end of the onions.
  • Peel the onions.
  • Turn onions on their side, one at a time, and cut down straight to make rings.
  • Cut the slices as evenly as you can.
  • Use your fingers to separate the rings.
  • Transfer onion rings to the bowl of iced water. Set aside for 10 minutes. Drain.
  • Transfer to a large bowl.
  • Add chaat masala, red chili powder, lemon juice and coriander (cilantro) leaves.
  • Season with salt. Toss.
  • Serve with Indian meals.
