This Mongolian sauce is a delicious combo of soy sauce, brown sugar and corn flour (cornstarch) mixture. The key elements of this sauce are soy sauce and brown sugar. These two ingredients create the contrasting flavors of sour and sweet. And obviously, they are the ‘must’ ingredients of this sauce. If you’re after a gluten free version, make sure the soy sauce you use in this recipe is gluten free.
The role of corn flour (cornstarch) mixture in this Mongolian sauce is to thicken it creating a delicious coating for the protein and vegetables in the stir fry sauce. All you need to do is combine together cornstarch (corn flour) and water. Give it a quick stir until corn flour dissolves in water.
The one optional ingredient in this sauce is Chinese rice wine or Shaoxing rice wine. It will add a nice tangy flavor to the dish. And again, it’s totally optional.
