Easy microwave meals is one of my go-to ideas when it comes to preparing a quick lunch or dinner. My biggest tip is to cook small portions at a time to create incredibly flavorful dishes.
Let’s talk about making fried rice in a microwave. Obviously, a nutritious and healthy meal idea for any day of the week. And of course, I really love a good fried rice stir fried over high heat with lip-smacking sauces and vibrant veggies. However, when I’m time-poor, the humble microwave becomes my best friend.
How To Make Microwave Egg Fried Rice
First, cook the egg. If you don’t want to add egg to your fried rice, feel free to skip this step. Cooking eggs in microwave is super easy. All you need to do is season whisked egg with a little salt and pop it in the microwave for about one minute.
And yes, you can make this fried rice in a mug or in a small bowl. Once cooked, break the egg into pieces with a small fork. Now transfer the eggs to a small container before you cook the fried rice.
You can choose your favorite rice for this microwave egg fried rice recipe – basmati, jasmine or long grain. If you are using basmati rice like I did, make sure you choose regular basmati rice. Other varieties of basmati rice may take longer time to cook in the microwave.
Place all the ingredients for the fried rice in a mug or bowl. This includes rinsed rice, veggies, water, soy sauce and sesame oil. Adding soy sauce and sesame oil is obviously the most basic way of making fried rice. You can add other flavorings if you like. The addition of red chili flakes or a splash of your favorite Chinese sauce is the right way to make your microwave egg fried rice more flavorful.
Now cover the mug or bowl and cook in the microwave for about 5-6 minutes. Leave it to rest for a few minutes before you fluff this with a fork.
Finally, add a generous sprinkle of chopped spring onions (scallions). And enjoy!
