Ingredients

  • 1 teaspoon oil
  • 1 egg lightly whisked
  • ½ cup rice basmati, long grain or jasmine, rinsed (I used regular basmati)
  • ½ cup chopped vegetables I used carrots, bell peppers and green peas
  • 1 cup water
  • 1 teaspoon soy sauce
  • ½ teaspoon sesame oil
  • Chopped spring onions scallions, to garnish

Instructions

  • Add oil to a 250ml capacity mug.
  • Add egg. Microwave for one minute.
  • Using a fork, break egg into small pieces. Transfer to a bowl. Set aside.
  • Add rice, vegetables, soy sauce, sesame oil and water to the mug. Stir to combine.
  • Microwave on high for about 6-8 minutes. Cover and set aside for 5 minutes.
  • Fluff rice with a fork.
  • Add it to cooked egg. Toss to combine.
  • Garnish with spring onions (scallions). Serve immediately.

Notes

    • You can use regular basmati rice, long grain rice or jasmine rice in this recipe.
    • Add your favorite veggies like corn, green beans and broccoli to this fried rice.
    • If you don’t like eggs, skip that step.
