Ingredients

rice
basmati, long grain or jasmine, rinsed (I used regular basmati)

chopped vegetables
I used carrots, bell peppers and green peas

water

teaspoon
soy sauce

teaspoon
sesame oil

Chopped spring onions
scallions, to garnish
Instructions
Add oil to a 250ml capacity mug.
Add egg. Microwave for one minute.
Using a fork, break egg into small pieces. Transfer to a bowl. Set aside.
Add rice, vegetables, soy sauce, sesame oil and water to the mug. Stir to combine.
Microwave on high for about 6-8 minutes. Cover and set aside for 5 minutes.
Fluff rice with a fork.
Add it to cooked egg. Toss to combine.
Garnish with spring onions (scallions). Serve immediately.

Notes
You can use regular basmati rice, long grain rice or jasmine rice in this recipe.
Add your favorite veggies like corn, green beans and broccoli to this fried rice.
If you don’t like eggs, skip that step.
