Curry rice or curried rice, whatever you call this rice, it’s one of the easiest yet most delicious rice recipes you could ever make. Curry powder is the key ingredient that makes this rice so unique and tasty. To be honest, it’s beyond awesome!
To begin with, you’ll need to sauté onions and garlic cloves in a little olive oil. When the onions are lightly browned, the ground spices (turmeric, curry powder, cumin) goes in. Give them a quick stir fry before you add in the rice.
I prefer basmati rice in this curry rice recipe, but feel free to use your favorite rice. It’s totally a personal choice. Toast the rice lightly in the oil and spices.
To cook the rice, add in about 3 ½ cups water, lemon juice, crushed stock cube and a pinch of salt. The next part of the recipe is all about simmering it over low heat until rice is tender and water is absorbed. Towards the end of the cooking process, I also want to throw in a handful of frozen peas that adds another level of deliciousness to the curry rice. Green peas is totally optional in this recipe, so you can omit them if you don’t like them.
This rice will be ready in just under 15 minutes, and it’s guaranteed to impress everyone.

Ingredients
- 2 tablespoon olive oil
- 1 small onion chopped
- 3 garlic cloves chopped
- ¼ teaspoon ground turmeric turmeric powder
- 1 tablespoon curry powder
- ¼ teaspoon ground cumin cumin powder
- 2 cups basmati rice rinsed
- 3 and ½ cups water
- 1 teaspoon lemon juice
- 1 veg stock cube crushed
- ½ cup frozen green peas
- Chopped coriander cilantro leaves, to garnish
- Cashew nuts to garnish
Instructions
- Heat oil in a large pan over medium-high heat. Add onions and garlic. Sauté, stirring occasionally, for 2-3 minutes or the onions are lightly browned. Add ground turmeric, ground cumin and curry powder. Sauté, stirring constantly, for one minute.
- Add rice. Lightly toast the rice for about 2 minutes. Pour in water. Add lemon juice and stock cube. Season with salt. Stir gently. Bring to boil. Reduce heat to low. Cook, covered, for about 10 minutes.
- When rice is nearly cooked, add green peas. Cook, covered, for another 4-5 minutes or until rice is tender and water is absorbed. Remove from heat.
- Garnish with coriander (cilantro) leaves and cashew nuts if you like.
