Cranberry and brie filo crackers. These are not your ordinary Christmas crackers. Packed with the heavenly combo of cranberries and brie, these edible crackers are guaranteed to be the showstopper on your entertaining table. Moreover, the flaked almonds add textural interest to the filo parcels. Deliciously perfect way to celebrate the holiday season!
Of the long list of Christmas shopping, crackers are a must. This year, why not adorn your entertaining table with the edible version of your favorite crackers? Such an amazing way to celebrate the most wonderful time of the year. Not only are these crackers easy to prepare making them the perfect crowd pleaser, they are fancy and loaded with festive flavors.
Let’s make these festive Christmas crackers
Start with cutting the filo pastry into squares. Depending on the size of the pastry sheets, you’ll get approximately 36 square sheets of filo pastry. As you know, filo sheets are very delicate, so make sure you handle them carefully.
Once squares are ready, the next step is assembling the ingredients of the filling. But before you add the filling, brush the pastry with a little butter. Now, place all the ingredients of the filling – a small slice of brie, a teaspoon of cranberry sauce and some almond flakes – at the very end of the square.
And now comes the fun part. Roll up the pastry very carefully and pinch the ends to make cute cranberry brie filo crackers. Brush the pastry with more melted butter so they’ll get a beautiful golden hue when baked. Finish off with a sprinkle of beautifully black sesame seeds. I arranged the crackers on two baking trays. This goes into the preheated oven and baked until golden.
About 15 minutes later, you can bite into sweet and creamy deliciousness of these cranberry brie filo crackers. For a finishing touch, I placed few rosemary leaves at both ends and it definitely adds to the aesthetic appeal. You can also tie chives at both ends to resemble crackers.
Aren’t these crackers cute enough to add to your holiday party menu?

So are you saying bake then freeze then rebake. Or freeze before baking?

Make the pastries, freeze them and bake from frozen (Don’t thaw). 🙂
Jessica says
How soon can they be made ahead? I’ll be attending dinner wednesday and will have to bring premade. Would itbe better to prep, freeze and cook before ? I’m sure very silly question
Rose Mary George says
Yes, you can make these ahead and freeze 🙂

What are ‘Almond Flakes’? I don’t seem to find them online.
Rose Mary George says
Very thinly sliced almonds. 🙂
Tina W says
Looks great a definite on the list for Christmas dinner. Just one suggestion, I’d put the almond slices BETWEEN the brie and the cranberry so there’d be less chance of the almonds puncturing the fragile fillo dough when they bake.
Sue says
How can you store left overs? Do they have to be reheated before service? If so can they be microwaved?
Rose Mary George says
You can refrigerate and reheat in the microwave. However, it may not be as crispy as the freshly baked ones.
Heather says
Can these be made with puff pastry?
Rose Mary George says
Yes
Julie Koroll says
A side note of what the cranberry sauce is would be helpful, was is jarred, canned or homemade?
Rose Mary George says
I used canned, but homemade is also perfect in this recipe!
Mary Weaver says
These look delicious! I’m a little confused on exactly what you’re saying about using two philo sheets to keep it from leaking out. Do you mean roll them up in one and then – what, maybe turn the seam down and roll an entire other sheet again? So, in that case, you would need to double the philo sheet amount???
Thanks!
Rose Mary George says
Use two small cut philo squares, place the filling in the middle, and roll
