Salmon Teriyaki Bowl Recipe. A little savory, a little sweet and so comforting, this wholesome bowl tastes way fancier than it looks. Flaky salmon, glossy teriyaki sauce, warm rice and your favorite veggies come together in a bowl that’s fresh, simple to make and ridiculously satisfying. This nourishing bowl is the kind of meal that makes you feel special even on the busiest days.

Why I Love This High Protein Bowl

A simple recipe that’s traditional enough to feel authentic, but comes with endless adaptability. In my opinion, this is more than an easy weeknight staple, it’s a masterclass in balancing amazing flavors. The richness of salmon, the sweetness of teriyaki sauce, and the simplicity of rice features the harmonious combination of umami, freshness and sweetness, making it one of the easiest Japanese-inspired dishes you can make at home. Also, it’s endlessly customizable to add your favorite veggies, grains, and garnishes.

Salmon pairs beautifully with the glossy reduction of soy sauce, mirin, cooking sake and brown sugar. Searing the fish before baking gives them crisp edges while keeping the inside tender and soft. Salmon also absorbs marinades quickly, making it ideal for busy cooks. 

The perfect bowl is built from four key elements, teriyaki salmon, steamed rice, vegetables and garnishes. Cook salmon anyway you like, pan sear, air fry or bake. The key is to let the fish absorb the teriyaki flavors. The classic choice of rice in this recipe is obviously Japanese short grain rice, however, long grain, brown rice or quinoa works too. With the veggies, the common additions include blanched broccoli, cucumber,  sautéed broccolini or bok choy, stir fried mushrooms or edamame. The garnish completes the flavor profile with sliced spring onions (scallions) or a sprinkle of sesame seeds.

  • Salmon - The key element pairing with teriyaki sauce.
  • Teriyaki sauce - The base flavor of the dish.
  • Rice - Long grain or Japanese short grain rice. I opted for egg fried rice.
  • Vegetable topping - I served this with sautéed broccolini.

Cook salmon - Just a touch of salt and pepper, and a layer of cornstarch gives it a crisp exterior when seared. The seared salmon goes into the oven, and you will get the perfect texture finish.

Teriyaki sauce - The combo of umami, sweet and savory flavors pairs beautifully with salmon. Let the sauce simmer to a glossy reduction for ultimate deliciousness. 

Build the bowl - Serve salmon over steamed rice, and whatever veggies you have got for a simple, nourishing meal. Don’t forget to pour the teriyaki glaze over the beautiful salmon.

Ingredients

Cook salmon:

  • 4 x 200 g salmon fillets, skin on
  • 2 tablespoons cornstarch (corn flour) or tapioca flour
  • 1 tablespoon oil
  • Teriyaki sauce
  • 1 teaspoon minced ginger
  • Salt and pepper to taste

To serve:

  • Steamed rice
  • Sautéed vegetables (I used broccolini)

To garnish:

  • Chopped spring onions (scallions)
  • Sesame seeds, optional

Instructions

  • Preheat oven to 200 C/ 400 F. Line a baking tray with baking paper.
  • Pat dry salmon fillets with a paper towel.
  • Season both sides with salt and pepper. Lightly dust with cornstarch (corn flour) or tapioca flour.
  • Heat oil in a large frying pan over medium-high heat.
  • Place salmon, skin side down, in the pan. Fry for about 2 minutes on each side.
  • Transfer to the baking tray. Bake for about 15-17 minutes or until cooked through.
  • Make teriyaki sauce.
  • Meanwhile, to the same pan, add teriyaki sauce, and bring to a simmer.
  • Add minced ginger. Stir to combine. Simmer for about 2-3 minutes.
  • Add salmon back to the pan. Spoon sauce over the fillets. Simmer for another 2 minutes.
  • Remove salmon from the pan. Simmer the sauce to reduce to a glossy glaze.
  • To serve, top rice with salmon and vegetables. Spoon the glaze over salmon.
  • Garnish with chopped spring onions (scallions) and sesame seeds.
