Blueberry fool. An easy dessert comprising of very simple ingredients like blueberries, cream and sugar. Guaranteed to liven up any meal, it can be made ahead to make your mealtimes extra delicious.
Blueberry Fool Recipe
Start with prepping blueberry purée. Simmer blueberries and sugar in a pan. A touch of lemon zest and lemon juice make it super delicious. Wait until sugar dissolves and blueberries soften. I like to keep the shape of the blueberries, so make sure you remove it from heat before blueberries turn mushy.
Next, beat together cream and sugar. When you get those beautiful soft peaks, add cooked blueberry mixture and give it a stir to get a ripple effect.
Finally, transfer this to cups and serve with blueberries and mint leaves. So good!

Ingredients
Blueberry purée:
- 200 g blueberries fresh or frozen
- 2 tablespoons granulated caster sugar
- 2 teaspoons lemon zest
- Juice from half of lemon
Cream mixture:
- 300 ml heavy thickened cream
- 2 tablespoons icing powdered sugar
Garnish:
- Blueberries
- Mint leaves
Instructions
- Place fresh or frozen blueberries, sugar, lemon zest and lemon juice in a saucepan. Stir to combine.
- Place the pan over medium heat. Cook, stirring occasionally, for 4-5 minutes or until the sugar dissolves and blueberries soften but keep their shape.
- Remove from heat.
- Cool completely.
- Beat cream and icing (powdered) sugar until soft peaks form.
- Add blueberry mixture.
- Stir to give a ripple effect.
- Garnish with blueberries and mint leaves before serving.
