Ingredients

Blueberry purée:

  • 200 g blueberries fresh or frozen
  • 2 tablespoons granulated sugar caster sugar
  • 2 teaspoons lemon zest
  • Juice from half of lemon

Cream mixture:

  • 300 ml heavy cream thickened cream
  • 2 tablespoons icing sugar powdered sugar

Garnish:

  • Blueberries
  • Mint leaves

Instructions

  • Place fresh or frozen blueberries, sugar, lemon zest and lemon juice in a saucepan. Stir to combine.
  • Place the pan over medium heat. Cook, stirring occasionally, for 4-5 minutes or until the sugar dissolves and blueberries soften but keep their shape.
  • Remove from heat.
  • Cool completely. 
  • Beat cream and icing (powdered) sugar until soft peaks form.
  • Add blueberry mixture.
  • Stir to give a ripple effect. 
  • Garnish with blueberries and mint leaves before serving.

  • Substitute blueberries with your favorite berries if you like
