Blueberry purée:

blueberries
fresh or frozen

granulated sugar
caster sugar

lemon zest
▢
Juice from half of lemon
Cream mixture:

ml
heavy cream
thickened cream
▢

tablespoons
icing sugar
powdered sugar
Garnish:

Blueberries
▢
Mint leaves
Instructions
Place fresh or frozen blueberries, sugar, lemon zest and lemon juice in a saucepan. Stir to combine.
Place the pan over medium heat. Cook, stirring occasionally, for 4-5 minutes or until the sugar dissolves and blueberries soften but keep their shape.
Remove from heat.
Cool completely.
Beat cream and icing (powdered) sugar until soft peaks form.
Add blueberry mixture.
Stir to give a ripple effect.
Garnish with blueberries and mint leaves before serving.
