This recipe for potato pastries or aloo patties is actually a jazzed up version of your regular veg pastries. These are delicious, nutritious, and so easy to make. The spiced potatoes are encased in crispy puff pastry to create perfect snacks.
Aloo Patties or Spiced Potato Puff Pastry Recipe
The filling - Consisting of potatoes and green peas laced with spices, the filling is encased in the puff pastry to make the pastries. Start with boiling the potatoes with a little salt. The cooked potatoes need to be added to a sautéed mixture of green peas, ginger, green chilies and spices. The spices include a combination of ground turmeric, ground cumin, ground coriander and chat masala. The chat masala, that can be substituted with amchur powder, is one of the key spice mixes you’ll need to add so much flavor and taste to this dish. Finally, add a handful of chopped coriander (cilantro) leaves. Let this mixture cool slightly before adding to the pastry sheets.
Assemble the pastries - You can cut the pastry sheets anyway you like, squares or rectangles. Just add the filling and seal the pastries. Depending on your dietary preferences, you can brush the pastries with milk or whisked egg. You can bake these pastries for about 20 minutes until they are golden.

Aloo Patties | Spiced Potato Pastries
Ingredients
Filling:
- 1 tablespoon ghee or oil
- 1 teaspoon minced ginger
- 2 green chilies chopped
- ¼ cup green peas I used frozen
- 3 potatoes boiled
- ½ teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon chat masala
- 2 tablespoons chopped coriander cilantro leaves
- Salt and pepper to taste
Pastries:
- 2 puff pastry sheets thawed
- Milk to brush the pastry sheets
- Ketchup or tomato sauce to serve
Instructions
Filling:
- Heat ghee or oil in a large frying pan over medium-high heat.
- Add ginger and green chilies. Sauté, stirring, for 15 seconds or until fragrant.
- Add green peas. Stir to combine. Add potatoes. Lightly mash the potatoes, and stir.
- Add ground turmeric, ground cumin, ground coriander, and chat masala.
- Season with salt and pepper. Stir to combine. Cook, stirring occasionally, for about 2-3 minutes.
- Stir in chopped coriander (cilantro) leaves. Remove from heat.
- Allow to cool completely.
Pastries:
- Preheat oven to 200 C/ 400 F. Line two baking trays with baking (parchment) paper. Set aside.
- Cut thawed pastry sheets into four equal portions.
- Divide filling among the pastry sheets.
- Fold and seal the edges of the sheets.
- Brush with milk.
- Bake for about 20-25 minutes or until the pastries are puffed and golden.

Notes
- Amchur powder or dried mango powder is a great substitute for chat masala
- Add grated mozzarella or parmesan for cheesy puffs
- For gluten free puff, use gluten free puff pastry
- More vegetables like bell peppers (capsicum), leek, carrots and green beans make for an absolutely delicious addition to the puffs
