Heat ghee or oil in a large frying pan over medium-high heat.
Add ginger and green chilies. Sauté, stirring, for 15 seconds or until fragrant.
Add green peas. Stir to combine. Add potatoes. Lightly mash the potatoes, and stir.
Add ground turmeric, ground cumin, ground coriander, and chat masala.
Season with salt and pepper. Stir to combine. Cook, stirring occasionally, for about 2-3 minutes.
Stir in chopped coriander (cilantro) leaves. Remove from heat.
Allow to cool completely.
