Aloo Palak | Potato Spinach Stir Fry | Video

There’s something about a vegetable laden dish that makes it feel extra nutritious. In fact, there are a lot of ways to jazz up the flavor of humble veggies. One is adding fragrant spices to a simple veggie stir fry. Well, there’s no correct way to prepare stir fried vegetables. But if you are a spice lover, try this simple yet seriously delicious side dish that you can whip up in no time at all. 

Aloo palak or potato spinach stir fry. A restaurant classic featuring the delicious combo of potatoes and spinach that are sautéed in plenty of aromatic spices. It’s healthy, easy to make and all the more delicious. Plus, you can add in more veggies and get as creative as you want. This ultimate spiced veggie stir fry is a must try.

The very step is heating up a little oil in a frying pan. Then, fry cumin seeds and a couple of dried red chilies. Add onions and let the onions brown. Stir fry garlic and green chilies. When fragrant, add the tomatoes and potatoes. 

At this stage, you’ll need to cook the potatoes until they are tender. Stir in the ground spices - ground turmeric, ground coriander and red chili powder- and fry until the raw smell disappears.

Now, add spinach. Cook until the leaves wilt. Finally, stir in some garam masala and coriander leaves. Heat through. 

Serve this aloo palak with parathas and steamed rice.

Ingredients

  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 2 dried red chilies
  • ½ cup chopped onions
  • 4 garlic cloves peeled and chopped
  • 1 green chili chopped
  • 3 potatoes peeled and diced
  • 1 large tomato chopped
  • ½ teaspoon ground turmeric turmeric powder
  • 1 teaspoon ground coriander coriander powder
  • 1 teaspoon red chili powder
  • 2 and ½ cups chopped spinach
  • ½ teaspoon garam masala
  • 2 tablespoons coriander cilantro leaves
  • Salt to taste
  • Steamed rice or paratha to serve

Instructions

  • Heat oil in a large frying pan or skillet over medium-high heat.
  • Add cumin seeds and dried red chilies. Sauté, stirring, for about 20 seconds.
  • Add onions. Sauté, stirring occasionally, for about 2-3 minutes or until browned.
  • Add garlic and green chilies. Sauté, stirring occasionally, for about 1 minute or until fragrant.
  • Add potatoes and tomatoes. Stir to combine.
  • Season with salt.
  • Cook, covered, for 5-6 minutes or until the potatoes are tender.
  • Add spinach. Cook, covered, for 1-2 minutes or until the spinach is wilted.
  • Add garam masala and coriander (cilantro) leaves. Stir to combine. Heat through.
  • Serve with steamed rice or parathas.
