Aloo Palak Recipe
The very step is heating up a little oil in a frying pan. Then, fry cumin seeds and a couple of dried red chilies. Add onions and let the onions brown. Stir fry garlic and green chilies. When fragrant, add the tomatoes and potatoes.
At this stage, you’ll need to cook the potatoes until they are tender. Stir in the ground spices – ground turmeric, ground coriander and red chili powder- and fry until the raw smell disappears.
Now, add spinach. Cook until the leaves wilt. Finally, stir in some garam masala and coriander leaves. Heat through.
Serve this aloo palak with parathas and steamed rice.

Stir fried spiced potatoes and spinach make for the ultimate delicious side dish for your Indian inspired meal
Ingredients
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 2 dried red chilies
- 1/2 cup chopped onions
- 4 garlic cloves, peeled and chopped
- 1 green chili, chopped
- 3 potatoes, peeled and diced
- 1 large tomato, chopped
- 1/2 teaspoon ground turmeric (turmeric powder)
- 1 teaspoon ground coriander (coriander powder)
- 1 teaspoon red chili powder
- 2 and 1/2 cups chopped spinach
- 1/2 teaspoon garam masala
- 2 tablespoons coriander (cilantro) leaves
- Salt to taste
- Steamed rice or paratha, to serve
Instructions
- Heat oil in a large frying pan or skillet over medium-high heat.
- Add cumin seeds and dried red chilies. Sauté, stirring, for about 20 seconds.
- Add onions. Sauté, stirring occasionally, for about 2-3 minutes or until browned.
- Add garlic and green chilies. Sauté, stirring occasionally, for about 1 minute or until fragrant.
- Add potatoes and tomatoes. Stir to combine.
- Season with salt.
- Cook, covered, for 5-6 minutes or until the potatoes are tender.
- Add spinach. Cook, covered, for 1-2 minutes or until the spinach is wilted.
- Add garam masala and coriander (cilantro) leaves. Stir to combine. Heat through.
- Serve with steamed rice or parathas.
