Long sunny days, incredible summer produce, barbecues – there are endless reasons to love summer. When it comes to summer treats, there’s nothing I love more than browsing through the ice cream aisle of the local grocery store. Indulging in delicious ice cream in all sorts of flavors is pure bliss.
I also love the idea of making homemade ice creams – rabri ice cream, coconut burfi ice cream and custard ice cream are a few of my favorites. So, to celebrate my love affair with ice creams, I made Indian style ice cream or malai kulfi to enjoy this summer.
It’s the traditional Indian ice cream, but I’m going to tell you all about the easiest way to make it at home. The classic treat is made by simmering milk for hours, but this cheat’s version tastes as good as its original counterpart.
The best part? You don’t even need an ice cream machine to make this malai kulfi. All you need is a blender or a hand held electric mixer. How cool is that?
This malai kulfi recipe just need three ingredients – condensed milk, evaporated milk and fresh cream. All you need to do is give a quick mix with your electric mixer or blender. Sugar is totally optional in this recipe. The mixture is already sugar-loaded with condensed milk. So, add sugar depending on your taste.
I have also added a little ground cardamom and a pinch of saffron. These two ingredients add a classic touch to this ice cream. Finally, pour the mixture into popsicle (ice block) molds and freeze. If you don’t want to use popsicle moulds, plastic small cups are a great option.
