Place cream, evaporated milk, condensed milk and sugar in a large bowl. Using an electric mixer (or in a blender), beat for 3 minutes or until the ingredients are well combined. Add ground cardamom and saffron. Beat until combined.
Pour the mixture into popsicle molds (iceblock molds). Freeze for at least 4 hours or until set.
To remove ice cream from the molds, dip it in warm water for few seconds.
