Uthappam | South Indian Savory Pancakes | Video

Uthappam. Crisp at the bottom, soft and fluffy at the top, and plenty of beautiful veggies cooked right into the batter, this savory pancake is a killer. It's certainly the most satisfying and delicious way to brighten up your mornings.

Be it sweet or savory, I love pancakes. The ‘basic pancake recipe ‘ on the blog is my go-to recipe for quick and easy sweet pancakes. I know, they’re just the perfect weekend brunch idea.

But today, let’s talk about this savory Indian style pancakes that also happens to be nutrient-rich and gluten free. You’ll need to start the preparations a day ahead, but it’s the perfect breakfast that everyone will love.

Uthappam (uttapam or oothapam) is basically a variation of South Indian favorite dosa. Both recipes start with the same batter - a simple combo of rice and urad dal (skinned black lentils). While dosa is all about crispy and thin crepes, uthappam resembles thick pancakes. Again, these pancakes are adorned with vibrant toppings to make them look pretty as well as delicious.

The batter needs a long fermentation period for about 6-8 hours. Once the batter is fermented, season with salt, and start creating fluffy pancakes.

One thing that differentiates uthappam from crispy dosa is their beautiful toppings. You can choose any veggies you have on hand, but onions, carrots, bell peppers (capsicum) and tomatoes are perfect classic ideas. Make sure you chop the veggies really fine so they cook faster.

Pour a small ladleful of batter onto a greased tawa or frying pan. Top with chopped veggies, and decorate anyway you like. I hope you like my rainbow uthappam. Just use your creative mind and the colorful veggies to make pretty uthappam. When the top side of pancake is set, flip it over to cook the other side. And done! Serve with sambar and your favorite chutney for a super delicious breakfast idea.

Ingredients

  • Dosa batter Recipe link just below this recipe
  • 1 cup chopped tomatoes
  • 1 cup chopped bell pepper capsicum
  • 1 cup coriander cilantro leaves
  • 1 cup grated carrot
  • 1 cup chopped onions
  • Oil
  • Sambar or chutney to serve (Recipe links below this recipe)

Instructions

  • Heat a tawa or frying pan over medium-high heat. Pour a small ladleful of dosa batter. Spread the batter to make a thick pancake. When bubbles appear, sprinkle veggies on top. Cover and cook for few minutes. When one side is crisp and golden, flip it over to cook the other side. Remove from pan. Repeat with the remaining batter and veggies.
  • Serve with sambar and your favorite chutney.

- The fermented dosa batter can be refrigerated for about 3-5 days.
