Everest Chicken with Tzatziki Dip

In my mind, Easter and a hearty feast are so interrelated. Maybe that’s because I grew up in a tradition where the Lent season ended with a massive lunch on Easter Sunday. While different varieties of spicy curries adorned the table, I loved the aroma that fills the entire house. The festive atmosphere never failed to make me happy.

Greek Tzatziki dip


In my opinion, chicken is one of those versatile ingredients that you’ll ever find in the culinary world. Pair it with anything you like, and you’ll end up with fantastic results. These days I’m always looking for new ways to serve chicken. So I didn’t think twice when I saw this everest chicken recipe in delicious magazine.

It featured a classic recipe with a hint of soy sauce. I just wanted to jazz things up a bit by adding a wonderful dip – Greek style tzatziki dip (yogurt and cucumber dip). I think the combination of spicy chicken and cooling yogurt really works well as a great starter for any special occasion.

Ingredients

  • For Everest Chicken Bites:
  • 500 g boneless chicken cut into bite-sized pieces
  • 1 tablespoon garlic paste
  • 1 tablespoon ginger paste
  • 2 teaspoon paprika
  • ¼ teaspoon ground ginger
  • 1 teaspoon garam masala
  • ¼ teaspoon chilly powder optional
  • ½ teaspoon soy sauce
  • 1 teaspoon lemon juice
  • 3 curry leaves roughly chopped
  • 1 sprig of coriander leaves
  • 2 teaspoon oil
  • Salt and ground black pepper to season
  • For Tzatziki Dip:
  • 1 cup Greek yogurt You can also use plain yogurt
  • 1 small cucumber peeled and grated
  • ½ teaspoon lemon juice
  • 1 garlic clove minced
  • Salt and ground black pepper to season

Instructions

To make everest chicken bites:

  • Place all the ingredients except chicken in the bowl of a small food processor, and process until a smooth paste forms. Rub the paste onto the chicken pieces, and marinate for 30 minutes in the refrigerator.
  • Preheat grill. Arrange the chicken pieces on the grill. Cook. Set aside.

To make tzatziki dip:

  • In a large bowl, combine all ingredients. Season with salt and ground black pepper.
  • Serve chicken bites with tzatziki sauce.

Notes

You can also thread chicken onto skewers to make kebabs.
