Ingredients

  • For Everest Chicken Bites:
  • 500 g boneless chicken cut into bite-sized pieces
  • 1 tablespoon garlic paste
  • 1 tablespoon ginger paste
  • 2 teaspoon paprika
  • ¼ teaspoon ground ginger
  • 1 teaspoon garam masala
  • ¼ teaspoon chilly powder optional
  • ½ teaspoon soy sauce
  • 1 teaspoon lemon juice
  • 3 curry leaves roughly chopped
  • 1 sprig of coriander leaves
  • 2 teaspoon oil
  • Salt and ground black pepper to season
  • For Tzatziki Dip:
  • 1 cup Greek yogurt You can also use plain yogurt
  • 1 small cucumber peeled and grated
  • ½ teaspoon lemon juice
  • 1 garlic clove minced
  • Salt and ground black pepper to season

Instructions

To make everest chicken bites:

  • Place all the ingredients except chicken in the bowl of a small food processor, and process until a smooth paste forms. Rub the paste onto the chicken pieces, and marinate for 30 minutes in the refrigerator.
  • Preheat grill. Arrange the chicken pieces on the grill. Cook. Set aside.

To make tzatziki dip:

  • In a large bowl, combine all ingredients. Season with salt and ground black pepper.
  • Serve chicken bites with tzatziki sauce.

Notes

You can also thread chicken onto skewers to make kebabs.
