Gochujang noodles. With little time in the kitchen and minimal chopping, you can whip up this vibrant noodles for your next dinner. Loaded with fiery gochujang or Korean chili paste, this dish is all about turning simple ingredients into a truly enticing meal. Add a side of sautéed bok choy and boiled eggs for a delicious dinner idea that’s satisfying and nourishing.

Fact: Gochujang, the fiery Korean chili paste, flavoured dishes are so popular just because of the exceptionally unique flavor profile. And it’s everywhere starting from noodles to pasta and spreads. That’s exactly where the magic happens turning a simple dish into a masterpiece.

In this gochujang noodles recipe, this chili paste is the key ingredient. With the right recipe, you can even turn simple noodles into a showstopper. I have opted for a minimal ingredient dish that can actually highlight the gorgeousness of this ingredient. While the vibrant colour makes it look pretty, the flavor is incredibly amazing.

Gochujang Noodles Recipe

Make sauce - The lip smacking fiery sauce is the key highlight of this noodles recipe. Korean chili paste or gochujang, the main ingredient, is combined with regular soy sauce, vinegar or mirin, sugar and water. The combination of spicy, sweet and tangy flavors is what makes this sauce so unique and delicious.

Cook noodles - Start with stir frying garlic and spring onions. Once it’s fragrant, add the sauce and cook for 4 minutes. Wait until you get a beautiful vibrant sauce. Next, add in noodles and toss. I like to serve them with a light drizzle of sesame oil, boiled eggs, steamed bok choy, and a generous sprinkle of sesame seeds.

Ingredients

Gochujang sauce:

  • 2 tablespoons gochujang Korean chili paste
  • 1 tablespoon soy sauce
  • 2 teaspoons white vinegar or mirin
  • 1 teaspoon white sugar
  • ¼ cup water

Noodles:

  • 800 g your favorite noodles
  • 1 tablespoon oil
  • 2 garlic cloves peeled and chopped
  • ½ cup chopped spring onions scallions, white part only
  • 1 teaspoon sesame oil

To serve:

  • Bok choy sauteed in a oil
  • Boiled eggs cooked to your liking
  • Sesame seeds

Garnish:

  • Chopped spring onions scallions

Instructions

  • To make gochujang sauce, combine together gochujang, soy sauce, vinegar or mirin, sugar and water. Set aside.
  • Cook noodles following packet directions. Drain. Set aside.
  • Heat oil in a wok over high heat.
  • Add garlic and spring onions (scallions). Stir fry for a minute or until the spring onions are tender.
  • Add gochujang sauce. Stir fry for 3 minutes.
  • Add noodles. Toss to combine.
  • Drizzle with sesame oil.
  • Transfer noodles to serving bowls.
  • Top with boiled egg and bok choy. Sprinkle with sesame seeds.
  • Garnish with chopped spring onions (scallions).

Notes

  • You can substitute water with broth (stock) for more flavor
  • Replace sugar with honey if you like
  • Add more greens like Chinese cabbage or pak choy
  • Bacon, tofu and ground (minced) pork also taste amazing with these noodles
