10 Minute Gochujang Noodles

Your favorite noodles flavored with gochujang and topped with sauteed bok choy, boiled eggs and sesame seeds. Perfect light meal for any day of the week!

Ingredients

Gochujang sauce:

  • 2 tablespoons gochujang Korean chili paste
  • 1 tablespoon soy sauce
  • 2 teaspoons white vinegar or mirin
  • 1 teaspoon white sugar
  • ¼ cup water

Noodles:

  • 800 g your favorite noodles
  • 1 tablespoon oil
  • 2 garlic cloves peeled and chopped
  • ½ cup chopped spring onions scallions, white part only
  • 1 teaspoon sesame oil

To serve:

  • Bok choy sauteed in a oil
  • Boiled eggs cooked to your liking
  • Sesame seeds

Garnish:

  • Chopped spring onions scallions

Instructions

  • To make gochujang sauce, combine together gochujang, soy sauce, vinegar or mirin, sugar and water. Set aside.
  • Cook noodles following packet directions. Drain. Set aside.
  • Heat oil in a wok over high heat.
  • Add garlic and spring onions (scallions). Stir fry for a minute or until the spring onions are tender.
  • Add gochujang sauce. Stir fry for 3 minutes.
  • Add noodles. Toss to combine.
  • Drizzle with sesame oil.
  • Transfer noodles to serving bowls.
  • Top with boiled egg and bok choy. Sprinkle with sesame seeds.
  • Garnish with chopped spring onions (scallions).

Notes

  • You can substitute water with broth (stock) for more flavor
  • Replace sugar with honey if you like
  • Add more greens like Chinese cabbage or pak choy
  • Bacon, tofu and ground (minced) pork also taste amazing with these noodles
