Crinkle cake. Crispy, heavenly slices of deliciousness - this isn’t your regular sweet treat. Made with phyllo (filo) pastry, this easy dessert features a custard filling that creates a beautiful melt-in-your-mouth texture. Simply divine!

When it comes to desserts, are you drawn to melt-in-the-mouth classics that never go out of style? In fact, they take deliciousness to another level. But, how about bringing a fresh take on a traditional treat? It’s just like combining two completely different elements to create delicious dish with a contemporary twist. Well, it’s not as scary as it sounds. Here’s an example.

Crinkle cake. This viral TikTok cake is actually a modern version of mesh om ali, a classic Egyptian dessert. Phyllo (filo) pastry sheets are folded to create that unique ‘crinkle’ shape, hence the name. In the classic recipe, pastry sheets are soaked in a custard filling made from scratch with eggs and milk. However, to make this recipe easy, we are going to use condensed milk and double cream for a tasty custard filling. In short, it’s a crowd pleasing dessert you can whip up in minutes. I must say, it’s divine.

Crinkle Cake Recipe

The basic idea of this recipe is actually the intricate yet clever folding of phyllo (filo) pastry to resemble an accordion. The generous drizzle of melted butter makes it crispy and golden when baked.

Contrasting the beautiful outside crispy layers, the inside of the crinkle cake is pillowy soft. You will need to make a simple custard to bring in this melt-in-your-mouth texture. This custard is a heavenly combination of condensed milk and double cream. To add that trademark Middle Eastern touch, I also add rose water and ground cardamom.

Pour this custard mixture over the pastry sheets. Bake again for another 15 minutes. That way, you will get crispy phyllo (filo) layers with soft inside.

To level up the recipe, sprinkle generously with chopped pistachios. Use your favorite nuts like almonds or walnuts. You can also dust with powdered sugar if you like.

Ingredients

  • 375 g 18 sheets phyllo (filo or fillo) pastry sheets, thawed
  • ½ cup melted butter
  • 250 ml condensed milk
  • 250 ml double cream
  • 1 teaspoon ground cardamom cardamom powder
  • 1 teaspoon rose water
  • Toasted pistachios crushed or your favorite nuts, to garnish

Instructions

  • Preheat oven to 180 C / 350 F.
  • Grease a large 13 x 9 - inch baking pan with butter.
  • Fold one sheet of pastry at a time, back and forth, to resemble an accordion.
  • Place in the baking pan.
  • Repeat with the remaining pastry sheets. Fan out the sheets to cover the entire pan. Alternatively, you can also roll them into coils.
  • Brush the sheets with melted butter. Pour the remaining butter over the sheets.
  • Bake for 15-20 minutes or until crispy and golden.
  • Meanwhile, combine together condensed milk, double cream, ground cardamom and rose water in a large bowl.
  • Once the pastry sheets are golden, remove from oven.
  • Pour the condensed milk-cream mixture over the pastry, making sure it is evenly distributed.
  • Bake for another 20-30 minutes or until the custard is set and the pastry is golden brown.
  • Garnish with toasted nuts.
  • Cool completely before slicing into squares.

  • You can make this recipe vegan by using vegan substitutes of butter, condensed milk and cream
  • You can add a few drops of rose essence instead of rose water
  • You can also serve this without nuts
