It’s September already. I’m so happy to know that the hibernating season is over for us in this part of the world. I just can’t wait for the longer days to arrive and head outdoors again. I can smell summer in the air right now.
Well, if you are like me, looking for fast and easy recipes for your family despite the weather, these spicy chicken drumsticks are just the right one for you. For me, they were love at first sight. Spices and herbs ground to a coarse paste make them irresistibly delicious. And then there’s the red food color. I don’t think it’s an essential ingredient. But that’s what makes the chicken RED. Look at that gorgeous color!
Spicy Red Chicken
Chicken marinated with aromatic spices and baked to perfection.
Ingredients
- 1 kg chicken drumsticks (You can use any part of chicken in this recipe)
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- ½ tsp ground turmeric
- 2 tsp garam masala
- 1 tbsp Kashmiri red chilly powder
- 2 big dried red chillies, ground to a coarse powder
- 1 tsp ground fennel
- ½ tsp ground cumin
- 1 star anise, ground to a coarse powder
- 1 tsp white vinegar
- 2 tbsp rice flour
- 2 tbsp oil
- 1 sprig curry leaves, finely chopped
- 2 sprigs coriander leaves, crushed
- Few drops of red food color
- Salt to taste
Instructions
- Place all the ingredients except chicken in a deep bowl. Mix well. Set aside.
- Using a sharp knife, score the drumsticks on either side. Then coat them in the marinade. Cover and refrigerate for at least two hours or overnight, if you can.
- Preheat oven to 180 degree Celsius.
- Arrange the chicken drumsticks in a baking dish. Place it in the oven. Bake for 40-45 minutes.
- Alternatively, you can also fry the chicken pieces.
